Chocolate Pots de Creme

In a heavy small saucepan combine the half-and-half or light cream, chocolate, and sugar
- 1 cup half-and-half or light cream
- 1 4-ounce package sweet baking chocolate, coarsely chopped
- 2 tsp sugar
- 3 large egg yolks, slightly beaten
- 1/2 tsp vanilla
- 1 recipe Caramelized Shards (optional) (see below)
Osso Buco

Roll shanks in flour; brown with garlic in hot oil in skillet
- 4 Veal or lamb shanks
- Well seasoned flour
- 1 Clove garlic -- minced
- 3 Tbs Olive oil
- 1 cup Canned consomme
- 1/4 cup Dry white wine
- 2 Tbs Tomato paste
- Rind of 1 lemon -- cut into strips
- 3 small Carrots -- finely diced
- 1 Tbs Parsley -- chopped
- 1/4 tsp Dried marjoram -- crushed
- 1/4 tsp Dried oregano -- crushed
- 1/8 tsp Dried sage -- crushed
Chocolate Pralines

Line a large heavy baking sheet with parchment paper or aluminum foil and set aside
- 1/2 cup light brown sugar
- 1/2 cup sugar
- 1/4 cup heavy cream
- 2 Tbs unsalted butter
- 3/4 cup chopped pecans
- 2 oz semisweet chocolate chips
Pasta Chowder

Prepare pasta according to package directions; drain
- 2 cups Small Shells, Ditalini or Stars, uncooked
- 3 Tbs margarine
- 1 small onion, chopped
- 1 clove garlic, minced
- 4 cups milk
- 2 Tbs chopped fresh parsley
- 1 1/2 cups shredded Cheddar cheese
- 2 6 1/2-oz. cans minced clams, undrained
- Salt to taste
- Pepper to taste
Beef Choufleur

Cut meat into ½-inch squares
- 6 oz beef round steak, 1/3-inch thick
- 2 tsp butter or margarine
- 1 1/4 cups cauliflower florets
- 1/2 small green bell pepper, seeded and cut into ¾-inch pieces
- 4 tsp soy sauce
- 1/2 clove garlic, minced
- 2 tsp cornstarch
- 1/8 tsp sugar
- 1/2 cup beef broth or water
- 1/3 cup sliced green onions
- 1 cup hot cooked rice
Chocolate Sauce (for Tart)

Scald the half-and-half and butter in a small heavy saucepan over medium heat
- 3/4 cup half-and-half
- 1 Tbs unsalted butter
- 1/2 lb semisweet chocolate chips (1 1/3 cups)
- 1/4 tsp pure vanilla extract
Pasta Stew with Rosemary Pork

Heat oil in a large Dutch oven or pot until hot
- 8 oz Ditalini, Orzo or Alphabets, uncooked
- 1 tsp vegetable oil
- 1 lb lean, boneless pork loin, cut into 3/4-inch cubes
- 1/8 tsp ground red pepper
- 1/8 tsp black pepper
- 1 cup chopped onion
- 1/2 cup chopped celery
- 3 13 1/4-oz. cans fat-free, low-sodium beef broth
- 1 1/2 Tbs minced fresh rosemary or 1 1/2 tsp. dried rosemary
- 1/2 tsp salt
- 2 medium sweet potatoes, peeled and cut into 1-inch cubes (about 3 cups)
- 2 cups chopped fresh spinach
- 2 Tbs lime juice
Beef Ragout

Trim fat from steak. Cut into 1 inch pieces
- 1 1/2 lb Top round, 1 inch thick
- 1 10 3/4 oz can Condensed cheddar cheese soup
- 1/4 cup Dried minced onion
- 3 Tbs Tomato paste
- 1/2 tsp Lemon pepper seasoning
- 2 cup Small mushrooms, halved
- 9 oz Frozen Italian green beans
- 1/2 cup Buttermilk
- 9 oz fettuccine
Chocolate Tart Crust

Sift the flour, sugar, cocoa, and salt into a large bowl
- 1 1/4 cups all-purpose flour
- 3/4 cup confectioners' sugar
- 1/4 cup unsweetened cocoa powder
- pinch salt
- 8 Tbs (1 stick) cold unsalted butter, cut into pieces
- 1 large egg, lightly beaten
Pasta with (Turkey) Sausage and Pepper Meatballs

Place all meatball ingredients in a medium bowl
- Meatballs:
- 1 lb Rigatoni, Ziti or other medium pasta shape, uncooked
- 8 oz lean ground beef
- 8 oz turkey sausage, casings removed
- 1/2 cup minced onion (1 small)
- 1/2 cup diced red bell pepper (1/2 medium)
- 2 large egg whites
- 1 1/2 cups fresh bread crumbs (about 3 slices)
- 2 Tbs minced fresh parsley
- 1 tsp fennel seeds
- 1/2 tsp salt
- 1/4 tsp pepper
- Sauce
