Cranberry and Apricot Chutney

In a 3-quart heavy saucepan combine granulated sugar and water
- 1 1/4 cups granulated sugar
- 1/2 cup water
- 1 12-ounce package cranberries (3 cups)
- 3/4 cup snipped dried apricots
- 3 Tbs brown sugar
- 3 Tbs cider vinegar
- 1 Tbs minced fresh ginger
Pesto (with walnuts)

Place the walnuts, pignolis, and garlic in the bowl of a food processor fitted with a steel blade
- 1/4 cup walnuts
- 1/4 cup pignolis (pine nuts)
- 3 Tbs chopped garlic (9 cloves)
- 5 cups fresh basil leaves, packed
- 1 tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 1/2 cups good olive oil
- 1 cup freshly grated Parmesan
Cranberry Sauce with Lime and Ginger

Stir together water, sugar, maple syrup, lime peel, and lime juice in a heavy, medium saucepan
- 1/2 cup water
- 1/2 cup sugar
- 1/2 cup maple syrup
- 1 1/2 tsp finely shredded lime peel
- 2 Tbs lime juice
- 1 12-ounce package cranberries (3 cups)
- 1 tsp minced fresh ginger
Picnic Fried Chicken

Combine flour, seasoned salt, lemon pepper and cinnamon in a shallow bowl
- 1/2 cup flour
- 2 tsp seasoned salt
- 2 tsp lemon pepper
- 1 1/2 tsp ground cinnamon
- 3 lbs fresh whole chicken, cut up
- 2 cups vegetable oil
Black Beans and Rice

Beans Wash and look for gravel then soak overnight in a bowl being sure beans are well covered with water
- 1 1/2 lb dried black turtle beans
- 1 large bell pepper, diced
- 1 hot pepper (optional)
- tabasco (optional)
- 4 onions, diced
- 6 cloves garlic, chopped
- 3/4 cup celery, diced
- 1/4 cup parsley, chopped
- 2 tbs oregano, chopped
- 2 tbs basil, chopped
- 2 bay leaves
- pinch ground cloves
- 1/2 tsp ground cumin
- 4 beef boullion cubes
- 1 lb lean bulk pork sausage
- 1 lb pork, boneless cubed
- 1 lb stew beef chunks
- 1/2 lb ham, smoked (1/2" cubes)
- 1 1/2 lb smoked link sausage cut into 1" to 2" lengths
- salt to taste
- pepper to taste
- 2 tbs vinegar
Creamed Potatoes with Tomatoes

Preheat the oven to 350 degrees F
- 3 lbs Idaho potatoes
- 1 1/2 cups milk
- 1 cup heavy cream
- 4 scallions, thinly sliced
- 2 plum tomatoes, seeded and finely chopped
- salt
- freshly ground white pepper
Plum Cobbler

In a 10"x10" casserole, cut up and mix plums with brown sugar
- 4 cups fresh, unpeeled plums
- 1/2 cup brown sugar
- Topping
- 1 cup flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1 beaten egg
- 1/2 cup melted butter
Black Forest Brownie

Bake brownies according to package directions
- 1 pkg. (18 oz.) NESTLÉ® TOLL HOUSE® Refrigerated Brownie or Walnut Brownie Bar Dough
- 1 container (21 oz.) cherry pie filling, warmed
- Whipped cream
- 1 bar (2 oz. total) NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Baking Bar, grated
Creamy White Beans

In a medium saucepan, combine the drained beans, onion, garlic, and thyme
- 1 cup dried white beans (cannellini beans), soaked overnight in water to cover, drained
- 1 medium onion, halved
- 1 garlic clove, peeled and smashed
- 2 sprigs thyme
- coarse salt
- freshly ground white pepper to taste
- 1/4 cup heavy cream
- 2 Tbs unsalted butter or herbed garlic butter
Potato Dumplings

Place potatoes in a large saucepan and cover with water
- 5 to 6 medium potatoes
- 5 Tbs all-purpose flour
- 1 egg, lightly beaten
- 1-1/2 tsp salt
- 1/4 tsp ground nutmeg
- 2 slices white bread, toasted
- 1/3 cup mashed potato flakes, optional
- Melted butter and toasted bread crumbs, optional
