Homemade Flour Tortillas

Whisk the flour, salt, and baking powder together in a mixing bowl
- 4 cups all-purpose flour
- 1 tsp salt
- 2 tsp baking powder
- 2 Tbs lard
- 1 1/2 cups water
Polka Dot Pumpkin Cupcakes

- Topping
- 1/2 cup (4 ounces) cream cheese, softened
- 1 large egg
- 2 Tbs granulated sugar
- 2/3 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels
- Cupcakes
- 1 package (16 ounces) pound cake mix
- 1 cup LIBBYS® 100% Pure Pumpkin
- 1/3 cup water
- 2 large eggs
- 2 tsp pumpkin pie spice
- 1 tsp baking soda
Honey BBQ Shredded Pork

In 9x13-inch pan, combine all ingredients
- 1 pork shoulder or picnic roast (remove visible fat) or 3 to 4 pounds turkey legs
- 1-1/4 cups ketchup
- 1/2 cup water
- 1/2 cup honey
- 1 cup chopped celery
- 1 cup chopped onion
- 2 Tbs lemon juice
- 3 Tbs white vinegar
- 3 Tbs Worcestershire sauce
- 2 Tbs dry mustard
- 1 tsp salt
- 1/2 tsp ground black pepper
- 8-10 crusty rolls or flour tortillas
Purple Cow

Crush/puree berries and strain through a fine sieve
- 4 cups Oregon blackberries, fresh or frozen
- 1/2 cup sugar
- 1 cup orange juice
- 4 cups frozen yogurt or vanilla ice cream
- 2 cups crushed ice
- whole berries for garnish
- fresh mint leaves for garnish (optional)
Rosemary Apple Salsa

In small bowl combine bell pepper, apples, apricot, green onion, lemon juice, oil, rosemary, salt and pepper
- 3/4 cup yellow bell pepper diced
- 3/4 cup Granny Smith apple diced
- 3/4 cup Braeburn or Jonathan apple diced
- 1/4 cup dried apricots diced
- 3 Tbs green onion minced
- 3 Tbs lemon juice
- 1-1/2 Tbs extra virgin olive oil
- 3 tsp fresh rosemary finely chopped
- 1/2 tsp salt
- Freshly ground pepper to taste
Honey Chocolate Cupcakes

Procedure In a small bowl, combine flour, cocoa, baking soda and salt; set aside
- Ingredients
- 1 cup all-purpose flour
- 3 Tbs cocoa
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1/4 cup butter or margarine
- 3/4 cup honey
- 1 egg
- 1/2 tsp vanilla
- 1/3 cup low fat milk
- Chocolate Honey Glaze (recipe follows)
Quick Fruit Leather

In blender or food processor, blend fruit and sugar until smooth
- 3 fresh California peaches, nectarines OR 6 fresh California plums
- 4 1/2 tsp granulated sugar
- plastic wrap, for microwave
Smoky Honey-Peppercorn Glaze for Poultry

In a small bowl, combine all ingredients except chicken until well blended
- 1/3 cup honey
- 1 Tbs ketchup
- 1/2 tsp coarsely ground black pepper
- 1/4 tsp liquid smoke
- 1/8 tsp salt
- 1/8 tsp crushed red pepper flakes
- 1 whole chicken or turkey, rinsed and dried (3-4 lbs.)
Honey Fried Chicken

Coat chicken with honey; set aside
- 3 lbs meaty chicken pieces
- 3/4 cup honey
- 3/4 cup buttermilk baking mix, or more
- 2 tsp dry mustard
- 1/2 tsp paprika
- salt to taste
- vegetable oil

- 3 cloves garlic, minced
- 1 medium zucchini, diced
- 1 28-oz. can peeled tomatoes
- 1 cup fresh or frozen corn kernels
