- 2 cups diced cooked beets (2 or 3 beets, weighing about 1 pound)
- 1 egg, beaten
- 1 tsp Worcestershire Sauce
- 1/4 tsp ground nutmeg
- Freshly ground black pepper to taste
- 1/2 Tbs olive oil
- 1 1/2 lbs russet potatoes, peeled and diced
- 2 Tbs vegetable oil
- 8 eggs
- 2 Tbs white wine vinegar
Cinnamon Honey Buns

On floured work surface, roll bread dough to form a rectangle 8 x 18 inches
- 1/4 cup butter or margarine, softened and divided
- 1/2 cup honey, divided
- 1/4 cup chopped toasted nuts, optional
- 2 tsp ground cinnamon
- 1 (1 lb.) loaf frozen bread dough, thawed as package directs

Holiday Date Sauce

Trim ends from onions, and blanch in boiling water for 1 minute
- 1/2 lb pearl (or small) onions
- 3 Tbs butter
- 1/4 cup sugar
- 3 Tbs balsamic vinegar
- 1 cup dry white wine
- 2 whole cloves
- 1/2 tsp fresh lemon peels, grated
- 1 1/2 dates, chopped
- 1 1/2 cups cranberries, whole
- 2 tsp cornstarch
- 1/4 cup orange juice
Rhubarb Muffins

Combine all dry ingredients except the brown sugar
- 2 cups flour
- 1 Tbs baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1 large egg
- 1/2 cup brown sugar
- 3 Tbs strawberry jam
- 3/4 cup milk
- 2 Tbs butter or margarine melted
- 2 tsp vanilla
- 1 1/2 cups fresh diced rhubarb

Put margarine, granulated sugar, brown sugar, eggs and vanilla in a large mixing bowl
- 1 cup margarine, softened
- 3/4 cup granulated sugar
- 3/4 cup firmly packed brown sugar

- 2 1/4 cups all-purpose flour
- 1 tsp baking soda
- 1 package (10 ounces) vanilla-flavored morsels or 1 cup coarsely chopped white chocolate

- 1 cup ricotta cheese

- 3/4 cup non-fat milk
- 1 tsp vanilla extract
- 1 tsp grated lemon rind
