Twice-Baked Sweet Potatoes

- 2 medium sweet potatoes
- 3/4 Tbs fat-free sour cream
- 1 3/4 tsp Equal for Recipes (or 6 packets Equal sweetener or 1/4 cup Equal Spoonful)

- Salt, to taste
