Crème Brullee - South Beach Diet Recipe (Phase 2)

In a bowl combine eggs, sugar
- 5 egg yolks + 1 whole egg
- 1 quart fat free evaporated skim milk
- 1 cup sugar substitute
- 2 vanilla beans or substitute 2 tablespoon vanilla extract
Crab-Stuffed Cherry Tomatoes Recipe

Cut a thin slice off the top of each tomato
- 1 pint cherry tomatoes
- 1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
- 1/2 cup diced green pepper
- 2 green onions, diced
- 2 tablespoons seasoned bread crumbs
- 1 teaspoon white wine vinegar
- 1/2 teaspoon dried parsley flakes
- 1/4 teaspoon dill weed
- 1/8 teaspoon salt, optional
"Anytime is Good" Sangria

1. Pour bottle of wine into pitcher over squeezed juice from fruit and brandy
- 1 Bottle of red wine, we used a Cabernet Sauvignon, but you can also use Merlot, Rioja reds, Zinfandel, or shiraz
- 2 Lemons, cut into wedges for juicing and slices for pitcher
- 2 Oranges, cut into wedges for juicing and slices for pitcher
- 1/2 cup sugar, that’s what they recommend, but I would sweeten to taste. We used less four 4 tablespoons.
- 1 Shot brandy (we used 1 cup this round, for a little extra kick.
- I recommend 1/2 cup)
- 2 Cups ginger ale or club soda (we actually used diet sprite!)

- •2 2/3 cups (650 mL) icing sugar
- •1/2 cup (125 mL) HERSHEY'S® Cocoa
- •1/3 cup (75 mL) milk
- •1 tsp (5 mL) vanilla extract

- •4 large eggs, room temperature
- •Boiling water, for roasting pan
Apricot-Ginger Fizz Mixer

For each drink, pour three ounces of mixer into a glass; add three ounces of sparkling wine
- •1 peeled (1 inch) fresh ginger, thinly sliced
- •1/2 cup sugar
- •2 1/2 cups apricot nectar

- 1/2 gallon cider
- 1/4 gallon cranberry juice
- 3 cinnamon sticks
