Pork Tenderloin with Vidalias, Figs, Apricots, Shitakes, and Balsamic

Heat olive oil in sauté pan
- 1 1/2 lb pork tenderloin, rinsed, dried and trimmed of excess fat or silver skin
- 1 T olive oil
- 2 Vidalia onions, sliced into 1/4 inch slices
- 1 c sliced shitake mushrooms (4 or 5 stemmed mushrooms)
- 12 dried figs
- 1/2 c dried apricots, chopped
- 3 T balsamic vinegar
- 1/2 c chicken stock
- 1 T chopped fresh sage
- salt and fresh ground peppe
Salad Rolls

These are so good. Keep for up to two hours in refrigerator under a damp paper towel and wrapped in plastic
- Water 1/3 cup 75 mL
- Thick teriyaki sauce 2 tbsp. 30 mL
- Low-sodium soy sauce 1 tbsp. 15 mL
- Cornstarch 2 tsp. 10 mL
- Fish sauce (optional) 1/4 - 1/2 tsp. 1 - 2 mL
- Shredded lettuce, lightly packed 2 cups 500 mL
- Chopped fresh bean sprouts 1 cup 250 mL
- Green onion, thinly sliced 1 1
- Fresh sweet basil leaves, cut chiffonade 12 12
- Fresh pea pods, chopped (optional) 1/3 cup 75 mL
- Grated carrot 1/3 cup 75 mL
- Chopped imitation crabmeat 3/4 cup 175 mL
- Rice vermicelli 1 oz. 28 g
- Hot water
- Rice paper wrappers (8 inch, 20 cm, size) 12 12
- Warm water
- PEANUT SAUCE
- Light smooth peanut butter 1/2 cup 125 mL
- Non-fat plain yogurt 1/2 cup 125 mL
- Medium-hot curry paste 1 1/2 tsp. 7 mL
- Chili paste (optional) 1/4 tsp. 1 mL
- Lime juice 1 1/2 tsp. 7 mL
- Finely chopped peanuts, for garnish

This is our South Beach Diet version of a favorite recipe
- 1 clove garlic, crushed
- 1 1/2 teaspoons crushed black or mixed peppercorns
- 4 beef tenderloin steaks (4 ounces each), trimmed of all visible fat
- Olive oil cooking spray
- 1/4 onion, chopped 2/3 cup green bell pepper strips
- 2/3 cup red bell pepper strips
- 2/3 cup yellow bell pepper strips
- 1 clove garlic, minced
- 1/2 teaspoon beef-flavored bouillon granules
- 1/2 teaspoon ground paprika
- 1/3 cup water
- 1/3 cup fat-free evaporated milk
BLT Bites

Cut a thin slice off of each tomato top
- 16 cherry tomatoes
- 1 lb bacon, cooked and crumbled
- 1/2 cup mayonnaise
- 1/3 cup chopped green onions
- 3 Tbsp parmesan cheese
- 2 Tbsp fresh chopped parsley
Garbanzo Stir Fry - South Beach Diet Recipe (Phase 1)

Heat oil in large skillet over medium heat
- 2 Tablespoons Olive Oil
- 1 Tablespoon chopped fresh Oregano
- 1 Tablespoon chopped Fresh Basil
- 1 clove garlic crushed (I used minced and 1 teaspoon)
- 1 can (15 oz) garbanzo beans
- 1 zucchini, halved and sliced
- 1/2 cup sliced Portobello mushrooms
- 1 red onion, chunked
- 1 red pepper sliced
- 1-2 plum tomatoes chopped
Pork Chops with Cranberry-Thyme Sauce

Lightly brown the pork chops in a skillet
- 1/2 cup butter, melted
- 4 6-oz boneless pork chops
- 1 cup white wine
- 1 cup cranberry sauce
- 1 small onion, chopped
- 1/4 cup fresh thyme, chopped
- salt and pepper to taste
Edamame Salad

This recipe is very satisfying, thanks to protein- and fiber-rich edamame
- 8 ounces frozen shelled edamame (green soybeans)
- 1 ounce seasoned rice vinegar
- 1/2 tablespoon vegetable oil
- 1 ⁄8 teaspoon salt
- Dash freshly ground black pepper
- 1/2 bunch radishes (4 ounces), cut in half and thinly sliced
- 1/2 cup loosely packed chopped fresh cilantro leaves

- 1 (18 ounce) package refridgerated cookie dough
- 1 (8 ounce) package cream cheese, room temperature
- 1/3 cup sugar
- 1/2 teaspoon vanilla extract
- Fresh blueberries, banana slices, mandarin orange sections, seedless grapes, strawberry halves, kiwi, raspberries or any other fruit you prefer, well drained
- 1/2 cup orange, peach, or apricot preserves (optional)
