Melt two tablespoons of the butter
- Ingredients:
- 3 tbsp. butter, plus more for the skillet
- 1/2 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/4 cup barley or rye flour
- 2 tbsp. sugar
- 1 tbsp. plus 1 tsp. baking powder
- 1/2 tsp. salt
- 2 large eggs
- 1 cup plain, full-fat yogurt
- 2 tbsp. milk, plus more as needed
- 1/2 tsp. lemon zest
- 1/2 tsp. vanilla extract
- 1 About 1 cup blueberries (fresh or frozen)

Combine the first six ingredients (lime juice through 1/4 tsp salt) in a bowl and mix well
- 3 tablespoons fresh lime juice
- 1 tablespoon light rum
- 1 tablespoon finely chopped mint
- 2 teaspoons sugar
- 2 teaspoons green hot pepper sauce (mild type)
- 1/4 teaspoon salt
- 2 8oz mahi mahi fillets (preferably skin on)
- Light olive oil or canola
- Coarse sea salt or kosher salt
