Italian Chicken Bake

Cut up chicken, onion, peppers and sausage
- ITALIAN BAKE
- 3 pounds chicken breasts (cooked & cut into bite size pieces)
- 6 Italian sausage links
- 2 jars or spaghetti sauce (I use Hunt's in the can - cheaper & just as good!)
- 1 pound of pasta, penne, macaroni, shells or what ever you like
- 1 large package of pizza cheese
- 1 onion
- 2 large bell peppers - red & green, cut into chunks

- 8 small potatoes,scrubbed
- 2 TBLS extra virgin olive oil
- - salt & pepper to taste -
- 1 tsp butter, melted
- 4 oz smoked salmon
- 1 TBLS lemon juice
- 2/3 C plain yogurt
- 1 TBLS (7) capers, drained 7 chopped
- 1 TBLS fresh dill, chopped
Strawberry Upside Down Cake

Directions Preheat an oven to 350 degrees F (175 degrees C)
- Ingredients
- 2 cups crushed fresh strawberries
- 1 (6 ounce) package strawberry flavored gelatin mix
- 3 cups miniature marshmallows
- 1 (18 ounce) package yellow cake mix, batter prepared as directed on package
Muffin Tin Omelets

Instructions: – Preheat oven to 375 degrees
- Ingredients:
- – 4 Eggs
- – 1/4 Cup of Milk
- – 1/2 teaspoon of Baking Powder
- – 1/2 teaspoon of Oil
- – Salt & Pepper
- – Grated Cheese (Your choice, I used Cheddar)
- – Favorite Omelet fillings (Your choice, I used onions, bell peppers and diced ham)
- Instructions:
- – Preheat oven to 375 degrees.
- – In a frying pan, cook up your favorite omelet ingredients. I chose onions, bell peppers, and diced ham.
- – Grease a 6 spot muffin tin.
- – Fill each muffin cup with cooked omelet ingredients.
- – Top with favorite shredded cheese.
- – Mix egg, milk, baking powder, oil, and salt & pepper in a bowl.
- – Pour egg mixture in each muffin cup. You should fill each about 4/5 of the way to the top.
- – Put in oven and bake for 20-25 minutes.
- – Take out of oven and let rest for 5 minutes before serving or storing.
Cheese Potatoes (twice baked)

Slice tops off baked potatoes

- 6 potatoes, baked 6
- 50 ml onion, chopped 1/4 cup
- 45 ml butter 3 tbsp
- 250 ml sour cream 1 cup
- 375 ml cheddar cheese, grated 1 1/2 cup
Poppyseed Pasta and Fruit Salad

COMBINE all ingredients
- 4 cups farfalle (bow-tie pasta), cooked, drained and cooled
- 2 pkg. (6 oz. each) OSCAR MAYER Deli Fresh Oven Roasted Chicken Breast
- 2 cups fresh strawberries, sliced
- 2 cups seedless red grapes, halved
- 2 cups cantaloupe chunks
- 1 green onion, chopped
- 1 Tbsp. finely chopped mint leaves
- 3/4 cup KRAFT Creamy Poppyseed Dressing
Chicken Enchilada Bake

- Ingredients
- 4-1/2 cups cubed rotisserie chicken
- 1 can (28 ounces) green enchilada sauce
- 1-1/4 cups (10 ounces) sour cream
- 9 corn tortillas (6 inches), cut into 1-1/2-inch pieces
- 4 cups (16 ounces) shredded Monterey Jack cheese
Pork Tenderloin with Potatoes

Brown meat in oil in dutch oven
- 1 pork tenderloin (1 1/2 lbs)
- 8 potatoes, peeled and sliced in 1/2" pieces
- 4 carrots, peeled and sliced in 1" pieces
- Fresh or canned mushrooms
- 1 can stewed tomatoes
- 1 package onion-mushroom soup mix
- 1 1/2 C water
Marinade for turkey or chicken

Mix all ingredients, add meat and marinate in refrigerator several hours or overnight

- 1/4 c soy sauce
- 1/4 C vegetable oil
- 1/4 C broth
- 2 TBLS lemon juice
- 2 TBLS dehydrated onions

Cran-Almond Muffins (prevention)

Directions 1.Heat oven to 375°F
- 1 C all-purpose flour
- 1/2 C whole wheat flour
- 3/4 C plus 2 tsp sugar
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 lg egg
- 1/2 C milk
- 4 tbsp butter, melted
- 1 tsp almond extract
- 1 2/3 C whole cranberries
- 1 tbsp butter, cut in 12 cubes
- 1/4 tsp ground cinnamon
- 1/2 C sliced almonds (optional)
