Asian Beef Skewers

Heat broiler, with rack set 4 inches from heat; line a rimmed baking sheet with aluminum foil
- Coarse salt
- 1/4 cup honey
- 1/4 cup packed light-brown sugar
- 1/4 cup soy sauce
- 3 tablespoons rice vinegar
- 1 tablespoon Thai red curry paste
- 3 tablespoons vegetable oil
- 1 1/2 pounds top sirloin beef or shell steak, cut into 1 1/2-inch cubes
- 1 red onion, quartered, layers separated
- 1 can (20 ounces) sliced pineapple in juice, drained, slices quartered
- 1 package (10 ounces) thin dried Chinese noodles or spaghetti
- 1/2 cup chopped fresh cilantro
- 1/4 to 1/2 teaspoon red-pepper flakes, for serving (optional)
Sweet Pepper Rice

In a medium pot, heat 1 tablespoon oil over medium-high
- 2 tablespoons extra-virgin olive oil
- 2 celery stalks, diced small
- 2 medium bell peppers (any color), diced small
- 1 small yellow onion, diced small
- Coarse salt and ground pepper
- 1 cup long-grain white rice
- 2 tablespoons finely chopped fresh parsley leaves

- Place 1 can crescent roll in the bottom of 9x13 pan. Then add:
- 2 lbs. lean ground beef
- 2 Yellow onions
- 4 cups shredded cabbage
- Garlic
- Salt
- Pepper
- 2 cans crescent rolls
- 1 can Cream of Mushroom w/ Roasted Garlic
- Saute onion and cabbage together with seasoning – about 25 min.
- Brown grown beef.
- Mix everything together with the mushroom soup.
- Meat mixture
- 2 cup mozzarella
- Top with crescent roll
- Bake 350 30 min. then cover with foil bake 10 more min.
- SERVE with Hot Beer Mustard!
Veggie Burger - Chickpea/brown rice

Directions 1. Mash chickpeas and brown rice until thick paste forms
- 2 cups cooked and drained chickpeas
- 1 cup cooked brown rice
- 1 shallot, minced
- 1 clove garlic, minced
- 2 tablespoons chopped fresh parsley
- Coarse salt and pepper
- 1 large egg, whisked
- 2 tablespoons olive oil
- Whole-grain mustard
- Red onion, sliced, for garnish
- Roasted red pepper, sliced, for garnish
- Green-leaf lettuce, for wrapping
Cauliflower casserole

Steam cauliflower florets until tender
- ■2 lbs cauliflower florets
- ■8 oz shredded sharp cheddar cheese, divided
- ■8 oz shredded Monterey Jack cheese, divided
- ■8 oz block cream cheese, softened
- ■4 tablespoons heavy cream
- ■2 bunches green onions, sliced (1 1/2 cups)
- ■6 sliced bacon, cooked and crumbled
- ■1 clove garlic, grated
- ■Salt & pepper to taste
- Preheat oven to 350 degrees.

- 1 (8.75 oz.) can corn
- 1 (15 oz.) can kidney beans
- 1 (15 oz.) can garbanzo beans
- 1 (15 oz.) can pinto beans
- 1 (15 oz.) can cannellini beans
- 1 (15 oz.) can black eyed peas
- 3/4 cup extra-virgin olive oil
- 1/2 cup red onion, finely chopped
- 1/2 cup champagne vinegar
- 1/3 cup sugar
- 1 teaspoon kosher salt
- 3/4 teaspoon freshly ground pepper
- 1/4 cup fresh cilantro, chopped
- 2 teaspoons oregano leaves, optional

Melt 2 tablespoons of the butter in a medium skillet over medium high heat and add the orzo
- 4 tablespoons butter, divided 2 tablespoons for the orzo and then 2 for the spinach
- 1 cup uncooked orzo pasta
- 14.5 ounces of water
- 2 teaspoons chicken base
- 1 tablespoon freshly minced garlic
- 1 (10 oz) bag of baby spinach
- 1/2 cup grated Parmesan cheese salt and pepper to taste
Salmon w/ Cucumber Relish

- 1/4 cup finely chopped red onion
- 1/4 cup diced tomato
- 2 tablespoons chopped fresh basil
