Key West Grilled Chicken

In a small bowl combine soy sauce, honey, vegetable oil, lime juice, and garlic
- This time of year fresh limes are fairly easy to get inexpensively and this particular recipe combines the flavors of fresh lime, zesty soy sauce, garlic and just the right amount of honey to make a fabulous marinade.
- 3 tablespoons soy sauce
- 2 Tbs. honey
- 1 tablespoon vegetable oil
- Juice of 1 Lime
- 1 teaspoon minced garlic
- 4 skinless, boneless chicken breast halves
Thin Mint Brownies

Instructions 1.Make brownie mix according to package
- 1 brownie mix mix according to package directions
- 15 chopped thin mint cookies
- 1 stick of butter softened
- 2 TB evaporated milk could use milk for substitute
- 2 cups powdered sugar
- 1/2 tsp. peppermint extract
- couple drops green food coloring
- 1 cup semi-sweet chocolate chips
- 1 tsp vanilla
- 1/2 cup chopped andis mints
Tortilla Black Bean Soup

In a large saucepan, heat oil over medium
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 teaspoon chili powder
- 2 cans (14 1/2 ounces each) diced tomatoes in juice
- 2 cans (15 ounces each) black beans, rinsed and drained
- 1 can (14 1/2 ounces) reduced-sodium chicken broth
- 1 package (10 ounces) frozen corn kernels
- Coarse salt and ground pepper
- 1 cup crushed tortilla chips, plus more for serving (optional)
- 1 tablespoon fresh lime juice, plus lime wedges for serving
Strawberry Lemonade

Instructions 1.Blend the strawberries, lemons and honey with 2 cups of water 2
- Ingredients
- 1 1/4 lb strawberries, washed & cut in halves, about 4 cups
- 2 lemons, washed and quartered (use limes to make strawberry limeade)
- ~ 1/2- 3/4 cup honey or sugar to taste, adjust based on your preference and sweetness of strawberries
- 6 cups of water
- Ice
- Garnishes: Strawberry slices, lemon slices and/or fresh herbs
- Instructions
- 1 .Blend the strawberries, lemons and honey with 2 cups of water
- 2 .Strain the strawberry lemon mix, add the additional 4 cups of water through the strainer
- 3 .Taste and add additional honey/sugar if needed
- 4 .Serve cold over ice and garnished with strawberry slices, lemon slices and herbs

SERVING: Makes six (6) 1 cup servings
- Ingredients:
- 5 ounces fresh spinach (half a 10 ounce bag)
- 3/4 cup chopped celery
- 3/4 cup dried cranberries
- 1 can (15 ounces) mandarin oranges - or fresh Cuties or Halos
- or 1 cup of pomegranate seeds
- 1 large Granny Smith Apple
- 1 teaspoon lemon juice
- 1/3 cup pecans
- Optional: Feta cheese & Orecchiette (little ears) pasta
- Dressing:
- 4 tablespoons olive oil or vegetable oil
- 2 tablespoons apple cider vinegar
- 2 tablespoons white wine vinegar
- 2-4 teaspoons white sugar - Or use Honey to taste or Stevia
- 1/8 teaspoon each: paprika, onion powder
- 1 tablespoon poppyseeds
- Throw it all together!
- SERVING: Makes six (6) 1 cup servings. As a compliment to the meal, makes twelve (12) 1/2 cup servings!
