Directions 1.Heat oven to 350°F
- FROSTING:
- 1 1/2 C dark brown sugar
- 3/4 C canola oil
- 1/3 C unsweetened applesauceadd to shopping list
- 4 egg whites
- 2 C all-purpose flour
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 tsp salt
- 1/8 tsp ground nutmeg
- 1/8 tsp ground ginger
- 2 1/2 C grated carrots (about 3/4 lb carrots)
- 1/3 C chopped walnuts
- 1 C confectioners' sugar
- 12 oz reduced-fat cream cheese (neufchatel), at room temperature
- 1/2 tsp vanilla extract

- 1/2 cup Zucchini (sliced lengthwise into thin strips)

- 1 Garlic clove (smashed)
- For the Tart:
- 1 sheet Puff Pastry (thawed)
- 1 Egg (beaten)
- 1/2 cup Ricotta Cheese (room temperature)
- 1/2 cup Goat Cheese (room temperature)
- 1/4 cup Parmigiano-Reggiano (grated)
- 1 Lemon (zest)
- 1 tablespoon Chives (finely chopped)
