Pork in Queso Flameado Sauce

DIRECTIONS: Preheat oven to 350º
- 12 oz. pork loin, cut into 4 portions
- 1 link chorizo, removed from the skin and crumbled
- 2 T. unsalted butter
- 4 large green onions, chopped
- 1/2 c. red bell pepper, chopped
- 1 c. cilantro, chopped
- 1/2 c. heavy cream (sub evaporated milk)
- 1/2 c. water
- 6 oz. Monterrey Jack cheese, shredded (or more if you can afford the carbs)
Holiday Snickerdoodles

1 Heat oven to 400ºF. In small bowl, mix red sugar and 1 1/2 teaspoons of the cinnamon; set aside
- 2 tablespoons Betty Crocker® Decors red sugar
- 1 tablespoon ground cinnamon
- 2 tablespoons Betty Crocker® Decors green sugar
- 1 1/2 cups sugar
- 1/2 cup shortening
- 1/2 cup butter or margarine, softened
- 2 eggs
- 2 3/4 cups Gold Medal® all-purpose flour
- 2 teaspoons cream of tartar
- 1 teaspoon baking soda
- 1/4 teaspoon salt

- 8 eggs
- 1/2 C flour
- 1 tsp baking powder
- 3/4 tsp salt
- 3 C shredded cheese
- 1 1/2 C cottage cheese

Italian Vegetable Soup

- 1 lb ground Italian Sausage (I use turkey Italian meatballs)
- 2 cloves garlic, minced
- 3 leaves fresh basil
- 2 cans beans of your choice
- 1 15 oz can diced tomatoes

- grated Parm or Romano
Peach Waffles

In a large metal or glass bowl, cream the butter and sugar together
- 1/3 cup butter
- 1/2 cup sugar
- 2 large eggs
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 and 1/2 cup sliced peaches - chopped into 1/4 inch pieces
- 1/2 teaspoon vanilla
- 1/2 teaspoon lemon juice
White Chili

Saute onion, garlic, green chiles and herbs/spices
- 2 Cans Great Northern beans
- 6-8 Cups chicken stock (3 cans Campbells)
- 2 cloves garlic, minced (or garlic powder)
- 1 onion (or dehydrated)
- 1 can green chiles
- 1 tsp cumin
- 1 tsp oregano
- 1/8 tsp cayenne
- 2 chicken breasts, cooked and shredded
- or one large can chicken.

- 1/2 tsp cream of tartar (or 1-1/2 Tbsp. vinegar)
- 1-1/2 tsp. baking powder
- 1-1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 cup hot water
- 1 cup sugar substitute (like Splenda granular) OR 1/4 cup + 2 tbs stevia
- 1/2 cup semi-sweet chocolate chips (or use white chocolate or peanut butter chips!)

Easy Pasta Salad

Toss pasta with all vegetables Add Parmesan cheese and Italian dressing Chill for several hours before serving
- 1 (12 ounce) bag corkscrew pasta, cooked according to directions
- 2 (4.25 ounce) cans ripe olives, sliced or chopped
- 1/2 cup green olives, chopped
- 1 red or yellow bell pepper, seeded and chopped
- 1 red onion, diced
- 1/2 cup fresh broccoli, chopped in small pieces
- 1 ear fresh corn, cut off the cob
- 12 cherry or grape tomatoes, cut in halves
- 1/2 cup grated Parmesan cheese
- 1 (16 ounce) bottle fat-free Italian dressing
