Fish Tacos

1. Preheat oven to 450 degrees 2
- Tarter sauce:
- 1 lb. tilapia filets, cut into strips
- kosher salt and pepper
- 1/2 cup mayonaise
- 2 lemons, cut into wedges
- 1/2 cup flour
- 1 cup panko crumbs
- 2 Tbl. olive oil
- 1 cup mayonnaise
- juice of 1/2 lemon
- 1 Tbls. chopped capers
- 1 Tbl. sweet pickle relish
- Season to taste with kosher salt.
Oven Roasted Sea Bass with Couscous and Warm Tomato Vinaigrette

Preheat oven to 350°. Cut green onion into 3-inch pieces, and cut pieces into julienne strips
- 1 green onion
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 1 cup chopped tomato
- 3 tablespoons fresh lemon juice, divided
- 1 tablespoon sherry vinegar
- 1 teaspoon kosher salt, divided
- 1 1/4 cups fat-free, less-sodium chicken broth
- 2/3 cup uncooked couscous
- 1/4 cup chopped fresh chives
- 4 (6-ounce) sea bass or halibut fillets (about 1 1/2 inches thick)
- 1/4 teaspoon freshly ground black pepper
- Cooking spray
- 8 (1/4-inch-thick) slices lemon, halved (about 1 lemon)
- Whole chives (optional)
Cannellini Stuffed Portobello Mushrooms

1. Preheat broiler. 2. Remove gills from underside of mushrooms using a spoon
- 4 (4 in) portobello caps
- 1/2 cup part skim ricotta cheese
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp dried rosemary, crushed
- 3/4 cup bottled pasta sauce
- 1 (16 oz) can cannellini beans, rinsed and drained
- 1/2 cup shredded part-skim mozzarella cheese
Coconut-Vanilla Macaroons

- 1 Head of Garlic 10-15 cloves
- 1/4 Cup Extra Virgin Olive Oil
- 4-5 Tb Fresh Lemon Juice 1 large or 2 small lemons
- Lemon Zest
- Pinch of Salt
- 1/8 tsp Red Pepper Flakes or more if you like spicy
- 1/2 lb Angel Hair Pasta - cooked
- Fresh Grated Parmesan

- 1 envelope Lipton Onion Recipe Soup Mix
- 2 lbs all purpose potatoes, cut into large chunks
- 1/3 cup olive oil or vegetable oil
