Ingredients

    (7 oz.) bag coconut

  • 3

    T. sugar

  • 2

    lrg egg whites

  • 1

    tsp. vanilla

Directions

1. Preheat over to 350. Line a baking sheet with wax paper or foil and coat with cooking spray. 2. In a large bowl, toss coconut with sugar. 3. In a small bowl, combine egg whites, vanilla, and a pinch of salt. Add to coconut mixture. 4. Form heaping Tbsp of mixture into 15 mounds (2 inches apart) 5. Bake for 15 minutes or until bottoms are golden and top start to brown. 6. Let cool 10 minutes.
