Baked Irish Breakfasts

1. Preheat the oven to 425°
- 1 stick butter
- Sea salt
- 1/4 cup canola oil
- 4 country-style pork sausage links (about 10 oz. total), casings removed
- 8 oz. bacon, cut crosswise into 1/3-inch strips
- 2 onions, sliced
- 4 oz. fresh spinach
- 8 eggs
- 8 cherry tomatoes, halved
- Flat-leaf parsley leaves, for serving
White Bean Crostini

1. Saute onion in olive oil, about 4 minutes
- 1 small onion, chopped
- 2 T olive oil
- 1 clove garlic
- 1/4 cup chopped tomato
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1/2 tsp salt
Apple Strudel Muffins

1. Preheat oven to 375. Grease a 12 cup muffin pan
- Topping:
- 2 cups all purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter
- 1 cup white sugar
- 2 eggs
- 1 1/4 tsp vanilla
- 1 1/2 cups chopped apples
- 1/3 cup packed brown sugar
- 1 T flour
- 1/8 tsp cinnamon
- 1 T butter
Peppered Flank Steak with Onion Marmalade

1. Coat a large skillet, heat oil and add sugar
- 1 tsp vegetable oil
- 1/3 cup sugar
- 3 cups chopped onion
- 1/4 tsp salt
- 1/4 cup orange juice
- 1 (1 1/2 lb) flank steak
- 2 tsp dijon mustard
- 1/4 tsp salt
- 5 garlic cloves, crushed
- 1-2 T Montreal steak seasoning
Banana Crumb Muffins

1. Preheat oven to 375 and lightly grease 12 muffin tins
- Topping:
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 3 bananas, mashed
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup butter, melted
- 1/3 cup packed brown sugar
- 2 T flour
- 1/8 tsp cinnamon
- 1 T butter
Taco Salad

1. Brown meat. Add seasoning and let cool
- 1 head of lettuce
- 3 medium tomatoes
- 1/2 green pepper
- 1/2 red pepper
- 1 package shredded Mexican Cheese
- 1/2 bottle Catalina salad dressing
- 1 lb ground turkey or beef
- 1 package taco seasoning
- 2 bags Tortilla chips
Autumn Arugula Salad with Caramelized Squash and Pomegranate Vinaigrette

Heat a large skillet over medium heat and add coconut oil
- 2 tablespoons olive oil
- 1 acorn squash, sliced in 1/2-inch thick rounds and seeds removed
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 6 cups baby arugula
- 1 avocado, sliced
- 1 pomegranate, arils removed
- 1 seedless cucumber, sliced
- pomegranate ginger vinaigrette
- 1/3 cup pomegranate juice
- 1/4 cup apple cider vinegar
- 1/2 teaspoon freshly grated ginger (if desired)
- 1 garlic clove, freshly grated
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/3 cup olive oil
Cinnamon Pull Apart Loaf

- Topping:
- 2 cans refrigerator biscuits
- 1/2 cup sugar
- 1/4 tsp cinnamon
- 1/3 cup butter
- 1/2 cup brown sugar

- 1/2 cup uncooked elbow macaroni
- 1/4 cup margarine
- 1/2 tsp salt
- 1/4 cup flour
- 1 3/4 cup milk
- 8 oz cheddar cheese
