Shrimp and Black Bean Tostadas

1. Preheat broiler to HIGH
- 1 T. olive oil
- 1 lb raw shrimp, peeled and de-veined
- 1/2 T. chili powder
- 1/2 tsp. paprika
- 1/2 tsp. cumin
- 1/2 tsp. salt
- 1/4 tsp. cayenne
- 4 corn tortillas
- 1 15 oz can of black beans, rinsed and drained
- 1 c. shredded Mexican cheese blend
- 1 mango, peeled and diced
- 1 avocado, diced
- 1/2 white onion, diced

1.) Combine all ingredients with wooden spoon til soft dough forms
- 2 c. Bisquick
- 2/3 c. milk
- 1/2 c. shredded cheddar cheese
Coconut Cream Pie

1. Toast coconut on baking sheet in over at 350 for 5 minutes
- 1 pkg (5 oz) instant vanilla pudding mix
- 1 1/2 cups cold milk
- 1 carton (8 oz) cool whip
- 3/4 - 1 cup coconut, toasted
- 1 pastry shell, baked or graham (8 in or 9 in)
Magic Cookie Bars

In 13 x 9 pan, melt margarine in oven and then sprinkle crumbs over margarine
- 1/2 cup margarine
- 1 1/2 cups graham cracker crumbs
- 1 (14 oz) can sweetened condensed milk
- 1 cup (6 oz) or 2 cups chocolate chips
- 1 (3.5 oz) can flaked coconut (1 1/3 cups)

Key Lime Pie

Crust: Mix all ingredients with fork until crumbly
- Crust:
- 1 1/2 cups flour
- 2 T confectioner's sugar
- 1/2 tsp salt
- 1/2 cup oil
- 2 T milk
- Filling:
- 4 egg yolks (save 3 egg whites)
- 1 can (11 oz) sweetened condensed milk
- 2 tsp lime juice
- 1/2 tsp cream of tartar

- 1-2 T. olive oil
- 1 1/2 c. finely chopped onion
- 1 tsp sugar
- 2 c. + 2 T bread flour, divided
- 1/2 c. whole wheat flour
- 1/2 tsp salt

- 1 c. warm skim milk
- 3 T olive oil
- 2 T bread flour
