Crispy Short Rib Carnitas with Sunset Slaw

Heat oven to 275 degrees. Combine the salt and chili powder in a dish
- Carnitas:
- 2 tsp. kosher salt
- 1 tsp. chili powder
- 3 lbs. short ribs, with bone
- Juice of 1 orange
- Juice of 1 1/2 limes
- 5 garlic cloves, unpeeled
- Sunset Slaw:
- 3 c. finely shredded cabbage (about 1/2 large cabbage)
- 1 carrot, coarsely grated
- Coarse salt
- Juice of 1/2 lime
- 2 scallions, thinly sliced
- Dollop of mayo, sour cream, or greek yogurt
- Dash of hot sauce (optional)
- 1/4 c. roughly chopped parsley
- serve:
- Corn tortillas
- Minced white onion or thinly sliced scallions
- Pickled jalapenos
- Hot Sauce
Rosemary Chicken Salad Sandwich

Combine first 9 ingredients, stirring well
- 3 c. chopped roasted skinless, boneless chicken breasts (about 3/4 pound)
- 1/3 c. chopped green onions
- 1/4 c. plain fat-free yogurt
- 1/4 c. light mayonnaise
- 1 tsp. chopped fresh rosemary
- 1 tsp. mustard
- 1/8 tsp. salt
- 1/8 tsp. freshly ground black pepper

Crust: - Combine ingredients
- Coconut Crust:
- 13/4 Graham Cracker Crumbs
- 1/3 cup margarine, melted
- 1/4 cup toasted flaked coconut
- 1 1/4 cups sugar
- Filling:
- 1 container (16 oz) low-fat cottage cheese
- 1 package (8 oz) light cream cheese, softened
- 1/4 cup plus 2 Tbl. flour
- 1 1/4 sugar
- 1/4 tsp. salt
- 4 egg whites
- 1 tsp. vanilla
- 1 cup canned unsweetened crushed pineapple, drained
- Topping:
- 2 cans (8oz) crushed pineapple in syrup
- 2 Tbl. sugar
- 1 Tbl. cornstarch

Taco Shells: 1) Mix all ingredients together and pour 1/4 cup of batter into a small skillet or crepe pan
- Taco Shells:
- 1 1/2 c. cold water
- 1 c. flour
- 1/2 c. cornmeal
- 1/4 tsp. salt
- 1 egg
- Enchilada Sauce:
- 1 can (15 oz) tomato sauce
- 2/3 c. water
- 1/2 c. chopped green pepper
- 1 Tbsp. chili powder
- 1/4 tsp ground cumin
- 1/2 can green chilies
- 1 clove garlic, finely chopped
- Meat:
- 1 lb. hamburger
- 1 med. onion, chopped
- 1-2 jalapeno pepper(s), chopped
- 1/2 c. sour cream
- Additional ingredient:
- Shredded mexican cheese
Cornmeal Chicken with Peach Salsa

1.) In large bowl, mix all salsa ingredients
- Fresh Peach Salsa:
- 5 medium peaches, peeled, chopped (3 cups)
- 1 large tomato, chopped (1 cup)
- 1/4 c chopped fresh cilantro
- 3 T vegetable oil
- 2 T white vinegar
- 1/4 teaspoon salt
- Chicken:
- 1/2 c yellow cornmeal
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 boneless skinless chicken breasts
- 2 tablespoons vegetable oil
