Glazed Carrots

Place all the ingredients in a medium, heavy saucepan
- 1 (1-pound) bag baby carrots
- 3 tablespoons unsalted butter
- 1/4 cup water
- 1/4 cup maple syrup
- 2 tablespoons orange juice
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon salt
Hot Mexican Spinach Dip

Preheat oven to 400 degrees F (200 degrees C)
- 1 (16 ounce) jar salsa
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 2 cups shredded Monterey Jack cheese
- 1 (8 ounce) package cream cheese, diced and softened
- 1 cup evaporated milk
- 1 (2.25 ounce) can chopped black olives, drained
- 1 tablespoon red wine vinegar
- salt and pepper to taste
Kahlua Cake

Mix all together in order given till well mixed
- 1 (18 ounce) box fudge cake mix, pudding in the mix type
- 1 (3 1/2 ounce) box chocolate pudding
- 2 1/2 cups chocolate chips (Guittard is the best)
- 1 pint sour cream
- 4 eggs
- 1/2 cup Kahlua
- 1/4 cup vegetable oil
Apple pie

Preheat oven to 425 degrees F (220 degrees C)
- 1 pie crust
- 1/2 cup unsalted butter
- 3 tbls flour
- 1/4 cup water
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 8 Granny Smith apples
- 1 cup flour
- 1 cup brown sugar
- 1/4 cup butter
Primal/low Carb Pumpkin Cheesecake

Chop pecans in blender until it turns into flour texture
- Crust:
- 2 cups pecans
- 1/2 tsp. each of ginger and cinnamon
- 4 tbls. butter
- 4 tbls. stevia or splenda
- Filling:
- 3- 8 oz packages cream cheese at room temperature
- 2 1/2 tsp. cinnamon
- 1 tsp. nutmeg
- 3/4 tsp. ginger
- 1/4 tsp. allspice
- 1/4 tsp. cloves
- 1/2 tsp. salt
- 1 1/2 cups sugar substitute, or to taste - I like Stevia
- 1 can (about 15 oz) pumpkin (organic, not pie filling)
- 1 tbls. vanilla
- 5 eggs
- 1/2 cup heavy cream
