Spinach Artichoke Queso
By hchampoux
Heat oil and add next four ingredients
- 2 tbls. oil
- 1 can green chilis (diced)
- 1 c. chopped onion
- 4 garlic cloves, minced
- 2 jap. peppers, seeded and chopped
- 1 14 oz. can chopped tomatoes with garlic
- 1 10 oz. frozen chopped spinach drained and thawed
- 1 14.5 oz. can artichoke hearts drained and chopped
- 1 tbls. red wine vinegar
- 1 8 oz. pckg. cream cheese
- 2 c. grated Monterey Jack
- 1 1/4 c. 1/2 and 1/2
- 1/2 tbls. granulated garlic powder
- 1/4 tsp. cumin
- 1 tbls. taco seasoning
- 2 dashes hot pepper sauce
- 1 tsp. salt to taste
- 1/2 tsp. black pepper
Chicken Enchiladas

Over medium heat, melt the butter and saute the green onion until tender
- 1 tbls. butter
- 1/2 c. green onions
- 1/2 tsp. garlic powder
- 1 4 ounce can diced green chiles
- 1 10.75 ounce can cream of mushroom
- 1/2 c. sour cream
- 1 1/2 c. roasted chicken (shredded)
- 1 c. shredded Cheddar cheese, divided
- 6 (12 inch) flour tortillas
- 1/4 c. milk
Chicken Alfredo Lasaga

Cook noodles for 10 min. or until al dente
- 1 8 oz. package lasagna noodles
- 3 c. heavy cream
- 2 10.75 oz. cans condensed cream of mushroom soup
- 1 c. grated parmesan cheese
- 1/4 c. butter
- 1 tbls. olive oil
- 1/2 large onion, diced
- 4 cloves garlic, sliced
- 5 mushrooms, diced
- 1 roasted chicken, shredded
- salt and ground black pepper to taste
- 1 c. ricotta cheese
- 1 bunch fresh spinach,
- 3 c. shredded mozzarella cheese
Strawberry Cake

Grease 2 loaf pans. Bake at 350 degrees for one hour
- 3 c. flour
- 3 c. sugar
- 1 tbls. cinnamon
- 1 tsp. baking soda
- 1 tsp. salt
- 4 eggs
- 1 1/4 c. oil
- 1 16 oz. bag frozen strawberries (thawed and mashed)
- nuts (optional)
Cranberry Chicken

Mix all ingredients together (minus the chicken)
- 6 boneless skinless chicken breasts
- 1 envelope lipton onion soup mix
- 1 can whole cranberry sauce
- 3/4 c. french dressing
Brownie Trifle

Prepare brownie mix and bake according to package directions in a 13 x 9 x 2 inch pan
- 1 (19.8 oz.) package fudge brownie mix
- 1/4 cup coffee-flavored liqueur (optional)
- 1 (3.5 oz) package instant chocolate mousse or instant chocolate pudding mix
- 8 (1.4 oz) toffee-flavored candy bars, crush (Heath Bars or Skor Bars)
- 1 (12 oz.) container frozen whipped topping, thawed
- Garnish: chocolate curls

- 2 (7.4 oz.) packages Martha White® Chocolate Chocolate Chip Flavored Muffin Mix
- 1/2 cup butter, melted
- 1 (3.4 oz.) package instant vanilla pudding mix
- 2 cups whole milk
- 1 cup Jif® Creamy Peanut Butter
- 1 (8 oz.) container of whipped topping
- 1 cup semisweet chocolate chips
- 2 tablespoons light corn syrup
- 1/2 cup heavy cream
- 8 chocolate peanut butter cups, crushed
Chicken Tortilla Casserole

Our favorite neighbor Geoff made this for us in a crockpot and we have made it over and over for parties
- 2 roasted chickens (shredded)
- 12 corn tortillas (torn up)
- 1/2 lb. grated sharp cheddar
- 1/2 lb. grated monterey jack
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 8 oz. canned diced green chiles
- 1 c milk
- 1 medium onion
Vegan Mac and Cheese

Cook macaroni al dente, according to package instructions (usually requires boiling for 6-8 minutes in salted water...
- 10 ounces dried macaroni (or about 2 2/3 cups)
- 1 cup peeled/diced yellow potatoes (or russets)
- 1/4 cup peeled/diced carrots
- 1/3 cup chopped onion
- 3/4 cup water (preferably use liquid from pot of boiled veggies)
- 1/2 cup raw cashews
- 1/4 cup coconut milk
- 2 tablespoons nutritional yeast flakes
- 1 tablespoon lemon juice
- 3/4 to 1 teaspoon salt (or more to taste)
- 1/4 teaspoon garlic powder
- 1 pinch cayenne pepper (optional)
- 1 pinch paprika

- 2 cups chopped pecans
- 1/4 cup cup butter, melted
- 2 (8-ounce) packages cream cheese, softened
- 1/2 cup butter, softened
- 2 (16-ounce) packages powdered sugar
- 2 teaspoons vanilla extract
