Chocolate Layer Cake

Directions Preheat oven to 350º F
- 2 cups all-purpose flour
- 2 cups sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon espresso powder
- 1 cup milk buttermilk, almond, or coconut milk
- 1/2 cup vegetable canola oil, or melted coconut oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water
Chocolate Buttercream Frosting

Add cocoa to a large bowl or bowl of stand mixer
- 1½ cups butter 3 sticks, softened
- 1 cup unsweetened cocoa
- 5 cups confectioner’s sugar
- ½ cup milk
- 2 teaspoons vanilla extract
- ½ teaspoon espresso powder
Southern Pecan Pie

Step 1 In a food processor, pulse the flour with the sugar and salt
- PIE SHELL
- 2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 1 stick plus 4 tablespoons unsalted butter, cut into 1/2-inch dice
- 1/4 cup plus 1 tablespoon ice water
- FILLING
- 1 1/2 cups pecan halves (51/2 ounces)
- 1 1/2 sticks cold unsalted butter
- 1 1/2 cups dark brown sugar
- 3/4 cup granulated sugar
- 1/2 cup light corn syrup
- 3 tablespoons whole milk
- 2 tablespoons all-purpose flour
- 1/2 vanilla bean, split, seeds scraped
- 1/2 teaspoon salt
- 4 large eggs
Turkey Pumpkin Pie

Preheat oven to 400-degrees
- 2 9" pie crust
- 3/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon kosher salt
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- pinch freshly grated nutmeg
- 2 large eggs
- 1 can (15 ounces) pumpkin pie purée
- 1 can (12 ounces) evaporated milk
- ½ teaspoon pure vanilla extract

- For the blueberry filling
- 4 ounces cream cheese, softened
- 1/2 cup confectioners' sugar
- 1/2 cup heavy whipping cream, whipped
- 1/3 cup flour depends on the juiciness of your berries, you can use up to half a cup
- 1 cup sugar
- 1/4 cup brown sugar
- ½ tsp cinnamon
- ½ tsp nutmeg
- 6 cups fresh blueberries thaw to room temp if using frozen berries
- 1 tsp finely chopped lemon zest
- 4 tbsp lemon juice
- 3 tbsp butter
- For the pastry
- 1/2 cup very cold vegetable shortening cut in small cubes
- 1/2 cup very cold butter cut in small cubes
- 2 ½ cups flour
- 2 tbsp brown sugar
- ½ tsp salt
- 1/4 to1/3 cup ice water Only enough to make a dough form.
- 1 tsp vanilla extract

In a large mixing bowl, cream butter
- 2 cups butter (no substitutes), softened
- 9 cups confectioners' sugar
- 2 1/2 cups baking cocoa
- 1 teaspoon vanilla extract
- 1 cup milk
Pomegranate margaritas

Pour all ingredients into a pitcher and mix well
- 2 cups tequila (gold is fine)
- 1 cup triple sec
- 2 cups pomegranate juice (use 100% pomegranate juice, such as POM Wonderful or something similar)
- 1 12-ounce container frozen limeade concentrate
- 2 cups water

In a pitcher, add all the ingredients and stir to combine
- 1/4 cup lemon slices
- 1/4 cup lime slices
- 1/4 cup orange, slices
- 1/4 cup pineapple chunks
- 1/4 cup seedless grapes
- 2 cups red wine
- 1/2 cup peach brandy
- 1 cup orange juice
- 1 cup lemon/lime soda
Corned Beef or Catfish Sliders

- 1/2 cup light mayonnaise
- 1 tablespoon coarse-grain mustard
- 1/4 red onion, grated
- 1 tablespoon cider vinegar
