Chicken Pot Pie#1--good

Preheat the oven to 400 degrees F
- 1 1/4 pounds boneless chicken breasts, cut into 1-inch cubes
- Sea salt and black pepper
- 3 tablespoons olive oil, plus more for brushing
- 1 tablespoon unsalted butter
- Pinch fresh grated nutmeg
- 3 stalks celery, chopped
- 2 medium carrots, chopped (about 1 cup)
- 2 cloves garlic, minced
- 1 small onion, chopped
- 6 ounces green beans, snipped and cut into 1/2-inch pieces (about 1 cup)
- 6 white mushrooms, thinly sliced
- 2 tablespoons all-purpose flour
- 1 cup low-sodium chicken broth
- 3 cups low-fat milk
- 1 cup frozen green peas, thawed
- 4 sheets frozen phyllo dough, thawed

- 2 cups Cheerios
- 2 cups Crispex or, Shreddies or your choice
- 2 cups pretzel sticks
- 1-1/2 cups salted peanuts
- 1/4 cup butter, cubed
- 3 teaspoons Worcestershire sauce
- 1/2 teaspoon each celery salt, onion salt and garlic salt
- 1/2 teaspoon paprika
Makeover Cleo's Potato Salad Recipe

This recipe is perfect for family gatherings, and now that it's much healthier, you can enjoy it all summer long
- 6 large potatoes
- 6 Bacon strips, diced
- 1/4 cup sugar
- 1 tablespoon all-purpose flour
- 1/2 cup water
- 1 egg, lightly beaten
- 2 cups fat-free Miracle Whip
- 3 tablespoons cider vinegar
- 1/2 cup heavy whipping cream, whipped
- 2 medium celery ribs, sliced
- 2 hard-cooked eggs, chopped
- 1 tablespoon grated onion
- 1 teaspoon celery seed
- 1/2 teaspoon salt
Baked Sweet Potatoes

1. Preheat oven to 350 degrees F (175 degrees C)
- 2 tablespoons olive oil
- 3 large sweet potatoes
- 2 pinches dried oregano
- 2 pinches salt
- 2 pinches ground black pepper
- Can substitute rosemary for oregano
- Can also add some paprika or cayenne
- Another version add 1 small sliced or diced yellow onion
Cheese Tortellini With Roasted Cauliflower & Filberts

Preheat oven to 425°F (220°C) and bring a large pot of salted water to a boil
- 1 small head (3 cups) cauliflower, cut into small florets
- 1 tbsp olive oil
- 3 slices bacon, cut into 1-in. pieces 1/4 tsp each salt and pepper
- 1/3 cup Filberts, chopped
- 2 small shallots, finely diced
- 2 tbsp chopped fresh Thyme
- 1 pkg fresh Cheese Filled Tortellini (350 g)
- 2 tbsp finely sliced fresh chives, for garnish
Fluffy Carrot Muffins with Cream Cheese Frosting

These carrot muffins are light, fluffy and most importantly - DELICIOUS!
- 1 1/3 cups all-purpose flour
- 1 1/2 teaspoons ground cinnamon
- 1 1/2 teaspoons baking soda
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon salt
- 3 eggs
- 1 cup white sugar
- 3/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 2 cups grated carrot
- 1/4 cup cream cheese, softened
- 2 tablespoons butter, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups sifted confectioners' sugar
Moe's Mexican Caviar

Once the juice has cooled down mix into the bowl of vegetables
- Mix together the following & bring to a boil, stir until sugar dissolves:
- 1/2 c sunflower oil
- 1/2 c sugar
- 3/4 c apple cider vinegar
- 1 tbs of water
- salt & pepper
- Cool mixture 20-25 minutes: then add to vegetables.
- In a large bowl mix together the following:
- 1 cup chopped green onion
- 1 cup chopped green pepper
- 1 cup chopped celery
- Drain & rinse & add to the above mixture in bowl:
- 1 large can of black beans
- 1 large can of lentils
- 1 small can of niblets corn
- 1 jar of chopped pimento
Chicken Wings (on the BBQ)

Mix all ingredients for sauce in a bowl and add thawed wings, coat well
- Sauce:
- Chicken wings
- 1/2 jar Pimento paste
- Chili sauce-use half as much as Pimento paste
- 1 Tblsp (generous) lemon juice
- 2 Tblsp (generous) olive oil
- Flavoured sauces for wings
Frozen Strawberry Dessert Recipe

•In a small bowl, combine the pretzels, sugar and butter
- FILLING:
- 1-1/4 cups crushed pretzels
- 1/4 cup sugar
- 1/2 cup butter, melted
- 1 can (14 ounces) sweetened condensed milk
- 1/2 cup thawed non-alcoholic strawberry daiquiri mix
- 1 package (8 ounces) cream cheese, softened
- 1 container (16 ounces) frozen sweetened sliced strawberries, thawed
- 1 carton (8 ounces) frozen whipped topping, thawed
Grilled Salmon with Crispy Mustard-Bread Crumb Crust

1. Arrange oven rack 6 inches below the broiler
- 3 Tbsp Dijon Mustard
- 2 Tbsp vinegar (white wine,cider or rice)
- 1 tsp honey
- Juice of half a lime (save other half for garnish)
- 1 tsp vegetable or olive oil, plus more for oiling the pan, drizzling on top of salmon
- 4 salmon fillets or steaks
- 1/2 cup bread crumbs
- Salt and pepper
- Fresh parsley
