Quick and Easy Spinach Salad

In large bowl, whisk together olive oil, vinegar, Dijon mustard, paprika, salt, pepper and sugar
- 2 tbsp (25 mL) extra-virgin olive_oil
- 1 tbsp (15 mL) apple_cider_vinegar
- 2 tsp (10 mL) Dijon_mustard
- 1/4 tsp (1 mL) paprika
- Pinch each salt, pepper and sugar
- 4 cups (1 L) baby spinach
- 1 cup (250 mL) thinly sliced mushrooms
- 4 slices bacon, cooked and chopped
- 1/4 small red onion, thinly sliced
- 1/4 cup (50 mL) sunflower seeds (if desired)
- 2 hard-cooked_eggs, quartered
Basic Cheese Sauce

Melt butter in sauce pan. Stir in flour, salt, and pepper
- ■3 tablespoons butter
- ■3 tablespoons flour
- ■1/2 teaspoon salt
- ■1/8 teaspoon pepper
- ■1 1/2 cups milk
- ■1 cup grated cheese
Coleslaw Dressing

Combine all ingredients and wisk until smooth
- 1/3 cup each Mayonaise and Sour Cream
- 1 Tbsp Honey Dijon Mustard
- 1 Tbsp Rice Vinegar
- 2 tsp white sugar
- 1/2 tsp (scant) celery salt
- 1/2 tsp each salt and pepper
Cauliflower Soup

Melt butter in large saucepan
- 2 Tablespoons butter
- 1/2 cup chopped onion
- 3 cups chopped fresh cauliflower
- 1 can-10oz- condensed chicken or veg broth
- 1/4 cup flour
- 2 & 1/2 cups milk
- 1 & 1/2 cups shredded cheese
- salt and pepper
Brine for Pickling Peppers/Onions

Wisk together all ingredients
- For 3 large peppers, 1 large onion:
- 2 cups white wine
- 1/2 cup white wine vinegar
- 1/2 cup rice vinegar
- 1/4 cup of balsamic vinegar (or use more of other 2 vinegars)
- 1/4 cup olive oil
- 2 tsp sea salt
Chocolate Panini

•Butter one side of each slice of bread; sprinkle with sugar
- 2 teaspoons butter, softened
- 2 slices white bread
- 1/2 teaspoon sugar
- 1 tablespoon cream cheese, softened
- 1/2 milk chocolate candy bar (1.55 ounces)
- 1/2 cup sliced fresh strawberries
- 1/4 cup heavy whipping cream, whipped
Chicken or Beef Tacos

Brown meat in pan, add minced garlic, or garlic powder
- 1-2 lbs ground chicken or beef
- 1/2 tsp garlic powder (or 3-4 cloves fresh garlic, minced)
- 1/4 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp ground cumin
- 1/4 tsp paprika
- red pepper flakes, to taste
- Salt and pepper to taste
- Chili sauce or hot sauce, water and flour added as needed
Citrus Roasted Tilapia

Preheat oven to 400°F/200°C
- 2 tilapia fillets
- Juice of 1/2 lemon, 1/2 lime, 1/2 orange
- 1-2 tbsp extra virgin olive oil
- 1 cloves garlic, minced
- 2 tablespoons fresh cilantro, chopped
- Smoked paprika to sprinkle over the fish before roasting
