SUPER SEEDY GRANOLA BARS

- 1 1/2 cups rolled oats (gluten free for GF eaters)
- 1/2 cup raw almonds, walnuts or pecans, roughly chopped
- 1 heaping (seriously) packed cup dates, pitted (deglet nour or medjool)*
- 2 Tbsp chia seeds
- 2 Tbsp sunflower seeds (roasted or raw)
- 2 Tbsp flax seeds (ground or whole)
- 2 Tbsp hemp seeds
- 1/4 cup agave nectar or maple syrup (or honey if not vegan)
- 1/4 cup creamy salted natural peanut butter or almond butter
- Optional Additions: Chocolate chips, dried fruit, other nuts, banana chips, etc.
Apple & Allspice Sticky Buns

Preheat oven to 400°F (200°C)
- 1/2 cup Golden Raisins
- 2 1/2 cups all-purpose flour, plus a bit more for rolling
- 1/2 cup sugar
- 2 tsp Baking Powder
- 1 1/2 tsp ground allspice, divided
- 1/2 tsp salt
- 1/2 cup cold unsalted butter, divided
- 1 egg, beaten
- 3/4 cup milk
- 1 tsp Pure Vanilla Extract
- 1 1/2 to 2 cups peeled and diced Granny Smith apples
- 2/3 cup Walnut Halves, chopped
- 1/2 cup brown sugar, divided
- 1/4 cup maple syrup
Tomato, Basil, Mozzarella Salad with Balsamic Vinaigrette

Combine diced mozzarella, tomatoes, basil, and red onion into a bowl
- 1 container of small mozzarella balls or 1 log of mozzarella cut into bite sized pieces
- 2 large tomatoes, diced (or 1 container of cherry tomatoes)
- 1/2 cup basil, sliced thin
- 1/4 cup red onion, sliced thin
- 1/4 cup balsamic vinegar
- 3/4 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 garlic clove, minced

Cinnamon Apple Energy Bites

Instructions Soak the dates in hot water for 10 minutes
- 1 cup dried apples (not freeze dried)
- 1/2 cup dates, pits removed
- 1/2 cup unsalted dry roasted almonds
- 1/2 cup old fashioned oats
- 1-2 scoops protein powder (optional)
- 1 T. maple syrup
- 1 t. cinnamon
- 1/8 t. allspice
