Crêpes du jour with Monterey Jack

Preheat oven to 425°F (220°C)
- 1 tbsp (15 mL) butter
- 1 onion, chopped
- 2 cloves garlic, chopped
- 1 lb (450 g) chicken breasts or thighs, cut into strips
- 1 1/4 cups (310 mL) tomato sauce, no salt added
- 1/2 cup (125 mL) salsa
- 1/3 cup (80 mL) 15% or 35% cooking cream
- Salt and freshly ground pepper
- 1 bunch of asparagus, trimmed
- 8 large (7") homemade or stored-bought crepes (or use phyllo)
- 6 oz (180 g) Canadian Monterey Jack, grated

- 1 cup (250 mL) chopped, dried apple

Seared Scallops with Herb-Butter Pan Sauce

There are few main courses as elegant and yet as simple as a dish of seared sea scallops
- For the Scallops:
- 1 lb. dry large sea scallops
- 1 Tbsp. unsalted butter
- 1 Tbsp. extra-virgin olive oil
- Salt and freshly ground black pepper
- For the Sauce:
- 3 Tbsp. unsalted butter, cut into six pieces
- 2 Tbsp. finely diced shallot (1 medium shallot)
- 1/4 cup dry white vermouth or dry white wine
- 1/4 cup finely chopped mixed fresh herbs, such as flat-leaf parsley and chives
- 1/4 tsp. finely grated lemon zest
- Salt and freshly ground black pepper
- 2 to 3 lemon wedges for serving
- Tip: Be sure to have all your ingredients prepped for the sauce (shallots diced, herbs chopped) before you begin searing the scallops
