  • 2 cups (8 oz) shredded Monterey Jack cheese with peppers

  • 1/3 cup chopped fresh cilantro
  • 8 (8 inch) flour tortillas
  • Vegetable cooking spray
  • 1 (8 oz) container sour cream
  • 1 (8 oz) jar tomatillo salsa (I used Pace Verde Cooking Sauce with Tomatillos and Jalapenos)
  • Toppings: diced tomatoes, chopped avacado, chopped green onions, sliced ripe olives

  • 1 12 oz can diced tomatoes
  • 2 16 oz cans pinto beans, drained and rinsed
  • 1 16 oz can red kidney beans, drained and rinsed
  • 1 12 oz bottle beer
  • 1 4 oz can diced green chiles
  • 1 T hot sauce
  • 1 1/2 t salt
  • Shredded cheddar and monterey jack cheese for garnish
