Pork Chops and Stuffing Bake

Prepare stuffing according to package directions
- 4 cups Pepperidge Farm Corn Bread Stuffing
- 6 boneless pork chops
- 1 can cream of celery OR cream of mushroom soup
- 1/3 cup milk
- 1/2 cup shredded cheddar cheese
Turkey Chowder

Saute onions, carrots, and celery in butter until soft but not brown
- 1 cup green onion, finely chopped
- 1 cup carrot, finely chopped
- 1 cup celery, finely chopped
- 1/4 cup butter
- 1/4 cup flour
- 2 cups turkey broth
- 2 cups half and half
- 1/4 t salt
- 1/8 t white pepper
- dash cayenne pepper
- 2 cups diced cooked turkey
Chicken Enchiladas

Preheat oven to 350 Stir together first 5 ingredients
- 3 cups chopped cooked chicken
- 2 cups (8 oz) shredded Monterey Jack cheese with peppers
- 1/2 cup sour cream
- 1 (4.5 oz) can chopped green chiles, drained
- 1/3 cup chopped fresh cilantro
- 8 (8 inch) flour tortillas
- Vegetable cooking spray
- 1 (8 oz) container sour cream
- 1 (8 oz) jar tomatillo salsa (I used Pace Verde Cooking Sauce with Tomatillos and Jalapenos)
- Toppings: diced tomatoes, chopped avacado, chopped green onions, sliced ripe olives
Super Bowl Chili

Heat oil in 5 qt saucepot over med heat Add beef and cool until well browned on all sides, about 5 minutes
- 1 T vegetable oil
- 1 1/2 lbs ground beef chuck
- 1 large onion, chopped
- 2 large garlic cloves, minced
- 1 T ground cumin
- 1 12 oz can diced tomatoes
- 2 16 oz cans pinto beans, drained and rinsed
- 1 16 oz can red kidney beans, drained and rinsed
- 1 12 oz bottle beer
- 1 4 oz can diced green chiles
- 1 T hot sauce
- 1 1/2 t salt
- Shredded cheddar and monterey jack cheese for garnish
Chicken Parmigiana

Preheat oven to 350 In a shallow bowl, combine the bread crumbs and 1/4 cup parmesan
- 4 boneless skinless chicken breasts
- 1/2 cup fine seasoned bread crumbs
- 1/2 cup grated parmesan cheese
- 1 large egg
- Olive oil
- 1 jar spaghetti sauce
- 1 clove garlic, crushed
- 1 t oregano
- Mozzarella slices
- Hot cooked pasta
- 2 T minced parsley
Cucumber Rye bread appetizer

Combine the cream cheese and ranch dressing mix
- Cream cheese block
- envelope Hidden Valley Ranch dressing mix
- Rye Bread squares (party rye)
- Cucumber
- Dill weed for garnish
Slow Cooker Boneless Turkey Breast

Place turkey breast into a large slow cooker
- 1 10 lb boneless turkey breast
- 1 1 oz pkg dry onion soup mix
- 3/4 cup water
- 2 T garlic powder
- 2 T onion powder
- 1 T dried parsley
- 1 T seasoned salt
- 1 T dried basil
- 1 T dried oregano
Frosting (Laura Matisi)

Blend first 5 ingredients until smooth
- 1 cup Crisco
- 1 stick margarine
- 4 oz cream cheese
- 1 t EACH clear vanilla and butter flavor
- 1-3 T water
- 2 pounds powdered sugar
Vanilla Vodka Cocktail

Shake and serve chilled in a martini glass
- 2 oz vanilla vodka
- 1 oz Irish cream
- 1/4 oz simple syrup
- pinch pumpkin spice
- 2 oz espresso
Chicken Fajita Bake

- 2 T vegetable oil
- 2 t chili powder/Lantana seasoning
- 1 1/2 t cumin
- 1/2 t garlic powder
- 1/2 t oregano
- 1/4 t seasoned salt
- 1 (15 oz) can Rotel diced tomatoes with green chiles
- 1 med onion, sliced
- 1/2 red bell pepper, cut into strips
- 1/2 green bell pepper, cut into strips
