Cauliflower and Broccoli Au Gratin

Place cauliflower and broccoli in 2 quart microwaveable dish
- 1 lb cauliflower florets
- 1 lb broccoli florets
- 1/2 cup water
- 4 oz cream cheese, cubed
- 1/4 cup milk
- 1/2 cup sour cream
- 1 1/2 cups shredded sharp cheddar cheese
- 10 Ritz crackers, crushed
- 3 T grated Parmesan cheese
Monique's Meatballs

Meatballs: Mix all ingredients together and form into balls
- Meatballs:
- 1 lb ground sirloin
- 1 lb italian chicken sausage, casings removed
- 3 eggs
- 3/4 cup italian bread crumbs
- 1/2-3/4 good quality ground parmesam
- dash garlic powder
- Sauce:
- Large can Tuttarossa or Conto crushed tomatoes
- 3 (14 oz) cans Hunts tomato sauce
- 1 diced onion
- 3-4 garlic cloves
- olive oil
Roast Beef with Vegetables and Gravy

Preheat oven to 325 Shake flour in oven bag
- 1 large Reynolds oven bag
- 1/4 c flour
- 3-4 lb boneless beef rump roast
- 1 T dried thyme
- 1/2 t seasoned salt
- 1/2 t pepper
- 1 jar beef gravy
- 3 large peeled carrots cut in 1 inch pieces
- 3 medium potatoes, quartered
- 2 stalks celery, cut in 2 inch pieces
- 1 medium onion, cut in 8 wedges
Cheese Ball
By S. Danford
Mix first two ingredients in a bowl with hands
- 8 oz medium cheddar cheese, grated
- 8 oz Monterey Jack with jalapeno peppers, grated
- 8 oz sour cream
- 4 T mayonnaise
- 1 small red onion, chopped
- 3 stalks celery, chopped
- Black pepper to taste
- Almonds or pecans, chopped
Campbells Paprika Chicken with Sour Cream Gravy

Mix flour and seasonings. Coat chicken Melt butter in skillet
- 1/2 cup flour
- 2 t paprika
- 1 t EACH salt, ground pepper, garlic powder, cayenne pepper
- 4 boneless chicken breast halves
- 1/4 c butter
- 1 can (10 3/4 oz) cream of chicken soup
- 1/4 cup sliced green onions
- 1 (8 oz) carton sour cream
Banana French Toast

Blend all ingredients except bread in the blender
- 2 bananas
- 1/4 c milk
- 3 eggs
- 10 slices bread
- 1 T sugar
- 1 t vanilla
- Pinch salt

- 3 medium russet potatoes, scrubbed
- 1 t kosher salt
- 1/2 t freshly ground pepper
- 1 1/2 t smoked paprika
- 1/4 t ground cumin
- 1 pinch cayenne pepper
- 2 T extra-virgin olive oil
Slow Cooker Chili

Place the beef in a skillet over medium heat and cook until evenly brown
- 1 lb ground beef
- 3/4 cup diced onion
- 3/4 cup diced celery
- 3/4 cup diced green pepper
- 2 cloves garlic, minced
- 1 (10.75 oz) cans tomato puree
- 1 (15 oz) can kidney beans with liquid
- 1 (15 oz) can kidney beans, drained
- 1 (15 oz) can cannellini beans with liquid
- 1/2 T chili powder
- 1/2 t dried parsley
- 1 t salt
- 3/4 t dried basil
- 3/4 t dried oregano
- 1/4 t ground black pepper
- 1/8 t hot pepper sauce
Cheeseburger Macaroni Skillet

In large skillet cook beef over medium heat 6-8 minutes or until no longer pink
- 1 lb lean ground beef
- 8 oz uncooked whole wheat elbow macaroni
- 3 cups reduced sodium beef broth
- 3/4 cup fat free milk
- 3 T ketchup
- 2 t Montreal Steak seasoning
- 1 t mustard
- 1/4 t onion powder
- 1 cup shredded reduced fat cheddar cheese
- Minced chives
Twice Baked Potatoes
