- 3/4 lb high quality dark chocolate
Greek Spanakopita Pie

Preheat oven to 350. Cook beef and onion in skillet over med high heat stirring frequently
- 1 lb lean ground beef
- 1 cup chopped onion
- 9 oz frozen spinach, thawed and squeezed dry
- 1/4 cup chopped Italian (flat leaf) parsley
- 1/2 t salt
- 1/4 t pepper
- 1 (15 oz) can Italian style diced tomatoes, undrained
- 12 sheets frozen phyllo dough (9x14), thawed
- 6 T butter or margarine
- 1/4 cup Italian style bread crumbs
- 1 cup crumbled feta cheese
Cheeseburger Soup

Brown the ground beef in 3 qt saucepan
- 1 lb ground beef
- 3/4 cup chopped onion
- 3/4 cup shredded carrots
- 3/4 cup diced celery
- 1 t dried basil
- 1 t dried parsley flakes
- 4 T butter, divided
- 3 cups chicken broth
- 4 cups peeled and diced potatoes
- 1/2 cup all purpose flour
- 2 cups Velveeta cheese, cubed
- 1 1/2 cups milk
- 1/4 - 1/2 t pepper
- 1/4 cup sour cream
Pomegranate and Citrus Broccoli Salad

In large serving bowl, mix mayonnaise, orange juice, sugar, salt, and pepper
- 1/2 cup mayonnaise
- 1/4 cup orange juice
- 1 t sugar
- 1/2 t salt
- dash pepper
- 3 cups coarsely chopped broccoli florets
- 1 medium orange, peeled and cut into bite-size chunks (about 1 cup)
- 3/4 cup pomegranate seeds or sweetened dried cranberries
- 1/3 cup roasted salted sunflower seeds
- 2 T sliced red onion
White Chili (Phyllis)

In a small saucepan, cook the onion, garlic and cumin in oil until translucent
- 1 T corn oil
- 1 onion, chopped
- 1 (15 oz) can garbonzo beans
- 2 cups canned white beans
- 1 clove garlic, minced
- 1 (12 oz) can white corn or hominy
- 1 t cumin
- 2 (4 oz) cans chopped green chiles
- 4 cups cooked diced chicken or turkey
- 2 cups chicken broth
- Shredded monterey jack cheese with peppers
Penne and Meatballs

In a bowl, combine the turkey, quinoa, egg, oregano, and thyme
- 1 lb fat free ground turkey
- 1/2 cup cooked quinoa
- 1 egg, lightly beaten
- 1 T fresh oregano or 1 t dried
- 1 t dried thyme
- 1/4 kosher salt
- olive oil spray
- 1/2 cup minced onion
- 2 garlic cloves
- 1 (24 oz) marinara sauce
- 6 cups broccoli florets
- 1 cup dry whole wheat penne pasta
- 4 T grated Parmesan cheese
Linda Pressley's Caramel Pecan Brownies

Preheat oven to 350 Heat 1/2 cup evaporated milk over medium heat, stirring constantly Add caramels and melt
- 1 (14 oz) pkg Kraft caramel candies, unwrapped
- 1 (5 oz) can evaporated milk
- 1 pkg Betty Crocker SuperMoist German Chocolate cake mix
- 2/3 cups butter
- 1 cup pecans, coarsely chopped
- 1 (6 oz) pkg semisweet chocolate chips
- 1 cup flaked coconut

- 1 cup mayo
- 1 1/2 cups grated parmesan
- 2 cloves garlic, minced
- paprika
- Optional: chopped fresh spinach, crab meat
