One Pot Mexican Beef and Rice Casserole

Heat olive oil in a large skillet over medium high heat
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 (1.25-ounce) package taco seasoning
- 1 cup rice
- 1 cup vegetable broth
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (10-ounce can) Ro*Tel® Mild Diced Tomatoes & Green Chilies
- 1 cup corn kernels, frozen, canned or roasted
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Kosher salt and freshly ground black pepper, to taste
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro leaves
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 Roma tomato, diced
PRESSURE COOKER BROCCOLI CHEESE SOUP

- 2 cups chicken broth
- 12 ounces broccoli florets
- 1/2 cup grated carrot
- ½ cup instant mashed potato flakes
- 2 cups grated cheddar
- ½ cup heavy cream
- 1 teaspoon hot pepper sauce

Coat the Eye of Round with Kosher Salt and seal in plastic wrap
- 3-5 pounds Eye of Round Beef Roast
- 1 Tablespoon Kosher Salt
- 1/2 cup Dry White Wine
- 1/4 cup Fresh Water
- 1 teaspoon Beef Base
- 1 Tablespoon Fish Sauce optional
- 2 cloves Fresh Garlic
- 1 Bay Leaf
- Rub
- 1 Tablespoon Extra Virgin Olive Oil
- 1 Tablespoon Freshly Ground Black Pepper
- 2 teaspoons Granulated Garlic
- 2 teaspoons TOG House Seasoning
- 2 teaspoons Ground Mustard Seed
PEAS, HERBS, & SHRIMP RISOTTO

In a pot, heat stock. In a pot, heat 1 tbs oil
- 6 cups chicken stock
- 2 tbs each olive oil and butter
- 2 cloves garlic, chopped
- 1 1/2 cups each Arborio rice and peas
- 1/2 cup white wine or broth
- Handful each of thyme leaves and parsley leaves, all chopped
- 1 lemon, zested and juiced
- 1 pound shrimp, peeled, deveined
- 1 cup grated Parmesan cheese
- 1 onion, chopped

Preheat the oven to 375°F
- 2 cups all-purpose flour, spooned into measuring cup and leveled-off
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 stick (1/2 cup) unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1-1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1/2 cup milk
- 2-1/4 cups fresh blueberries
- 2 tablespoons turbinado sugar (also called raw sugar or demerara sugar)
