Blueberry Coffee Cake

For the cake: Preheat the oven to 350 degrees F
- Topping:
- 5 tablespoons salted butter, softened, plus more for greasing the pan
- 2 cups all-purpose flour
- 2 heaping teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 3/4 cup sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 3/4 cup whole milk
- 2 cups fresh blueberries
- 1/2 cup all-purpose flour
- 1/2 cup sugar
- 6 tablespoons salted butter
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Crock Pot Cheesy Potatoes

1. Add the first 6 ingredients to a 4-5 quart capacity Crock Pot
- 1-10-3/4 1-10-3/4 1-10-3/4 Can Condensed Cream of Chicken Soup Undiluted
- 1 1 1 Cup Sour Cream
- 1/2 1/2 1/2 Cup Onion Finely Chopped
- 1/4 1/4 1/4 Cup Butter Melted
- 3/4 3/4 3/4 Teaspoons Salt
- 1/4 1/4 1/4 Teaspoon Pepper
- 1-32 1-32 Package 1-32 Ounces Package Frozen Cubed Hash Browns Thawed
- 2 2 8 Cups 8 Ounces Sharp Cheddar Cheese, Shredded
Wicked Chicken

1. cook and drain the pasta 2
- 4 skinless boneless chicken breasts
- 1/2 box any shaped pasta
- 1 jar Classico Pablaneo Alfredo sauce (or regular Alfredo sauce and 1 4oz can of green chiles)
- salt, pepper, garlic powder, red pepper flakes to taste
Steak Marinade

Combine all ingredients in a blender and puree for 30 seconds
- 1/3 c. Soy Sauce
- 1/2 c. Olive Oil
- 1/3 c. lemon Juice
- 1/4 c. Worcesterchire Sauce
- 1 1/2 Tbs of Garlic POWDER (Note, NOT Garlic Salt!!)
- 3 Tbs Dried Basil or 1 Tbs fresh chopped basil
- 1 1/2 tbs Dried Parsley or 2 tsp fresh chopped parsley
- 1/2 tsp black pepper
Instant Pot Refried Beans

I don’t recommend salting the beans prior to cooking, because I’ve experience instances where they never soften
- 2 pounds dried pinto beans, sorted
- 1 1/2 cups chopped onion
- 4-5 garlic cloves, roughly chopped
- 1 jalapeno, seeded and chopped
- 2 teaspoons dried oregano
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon ground black pepper
- 3 tablespoons lard, or vegetable shortening for vegan
- 4 cups chicken broth, or vegetable broth for vegan
- 4 cups water
- 1-2 teaspoons sea salt
Old El Paso Enchilada Sauce

- 1 small onion chopped
- 15 Ounce can chicken broth
- 2 tablespoons chili powder

Spread roll bottoms with mayonnaise
- 1 pkg. (12 oz) King’s Hawaiian sweet rolls, split
- 1/4 cup mayonnaise
- 12 slices deli turkey
- 12 slices cooked bacon
- 6 slices Gruyere cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup diced pimientos (or sliced tomatoes)
- 1/2 cup butter, cubed
- 2 Tablespoons finely chopped onion
- 2 Tablespoons brown sugar

INSTANT POT EASY CHILI MAC

Set Instant Pot to saute mode and add ground beef and 1/2 teaspoon of salt
- 1 lb. ground beef (85% lean)
- 2 1/2 cups elbow macaroni
- 14.5oz can of diced tomatoes with green chilies
- 8oz can tomato sauce
- 2 tablespoons chili powder
- 1/2 tablespoon cumin
- 1 teaspoon salt, divided
- 1 cup shredded colby jack cheese
Pressure Cooker Cabbage Roll Soup

Turn the pressure cooker on to the “brown” method
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 lb ground beef
- 1/2 lb ground pork
- 3/4 cup uncooked rice (I use brown rice, but have used white as well)
- 1 medium cabbage, core removed and diced into bite size pieces
- 1 (28 oz) can diced tomatoes, untrained
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 1/2 cups V8 or other vegetable juice
- 1 tbsp Worcestershire sauce
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp cayenne pepper
- 1 bay leaf
- Salt and pepper to taste
- 1 tbsp oil
