Crock Pot Pork Steak with Gravy

- 1 onion, sliced
- 2-3 lbs pork steaks
- 1 teaspoon minced garlic
- 1/2 teaspoon seasoned salt
- 1/4 teaspoon ground red pepper
- 1/4 teaspoon pepper

Combine the tomatoes, scallions, jalapeno, garlic, cilantro, lime juice and vinegar in a medium serving bowl
- 5 to 6 Roma tomatoes, diced
- 8 to 10 scallions, whites and light green parts, chopped
- 1/2 jalapeno pepper, seeds removed, finely chopped
- 1 to 2 cloves garlic, finely chopped almost to a paste
- 1 cup loosely packed cilantro, chopped
- Juice of 1 to 2 limes
- 2 teaspoons red wine vinegar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground white pepper

- 3 tbs salt
- 3 tbs sugar
- 1 quartered chicken
- 2 tbs each canola oil, butter, cut into 4 cubes, and lemon juice

- 2 sprigs rosemary
