- 2 Tbsp Dijon Mustard

- 1 Tbsp Fresh Parsley, chopped
- 1 Tbsp Fresh Basil, chopped
- 1 Shallot, chopped finely
- 3 Cloves Of Garlic, minced
- Sea Salt And Fresh Cracked Pepper To Taste
Alternative Teriyaki Tuna

Line baking pan with aluminum foil (trust me, it's a much easier clean-up)
- 1/2 cup wheat free tamari
- 2 TB brown rice vinegar
- 2 TB fresh squeezed lemon juice
- 1/2 TB sesame oil
- 1 TB minced garlic
- 1 TB minced fresh ginger
- 1/4 cup sliced scallions
- 1/2 cup rough ground nuts (to imitate panko bread crumbs)
Baked Apples with Maple-Walnut Sauce

1. Preheat oven to 400°F
- 4 large apples, such as Gala or Granny Smith, halved crosswise and cored
- 2 tsp. lemon juice, divided
- 2 Tbs. light or dark brown sugar
- 1/4 tsp. ground cinnamon
- 1 cup maple syrup
- 1/8 tsp. salt
- 1/2 cup chopped toasted walnuts
Roasted Ratatouille

- Recipe stolen from my awesome friend:
- the veggies
- 1 · 1 eggplant, peeled & cubed
- 1 · 1 large bell pepper, cut into squares approx. 3/4 inch
- 1 · 1 onion, sliced into rings
- 2 · 2 zucchinis, sliced into 3/4 in rounds
- · Tomatoes (I used 4 Roma, so if you use a bigger tomato, use less), diced
- the spices
- · lots of Minced Garlic (I used like 6 cloves)
- 1/4 · 1/4 c olive oil
- 2 · 2 heaping TB Herbs de Provence
- 1 · 1 TB salt
- · fresh ground pepper to taste
- *You will also need 1 TB of balsamic vinegar, but not until the end.
- the procedure
- 1 .) Preheat oven to 450º
- 2 .) Eggplant is super moist, and you want to get rid of that moisture
- by tossing it with salt and setting it inside of a towel.
- 3 .) While that's happening, you can prepare the spices. Just put all
- of them (except balsamic) together in a small bowl and mix.
- 4 .) Once the eggplant is dry, combine everything EXCEPT the tomatoes
- in a bowl and mix with your hands until everything is coated with the
- oil mixture.
- 5 .) Spread the veggies into one layer on a roasting pan, and roast
- them for about 30 minutes, until they are fall-apart soft.
- 6 .) Take them out of the oven, pour back into the bowl, and top with
- the tomatoes and balsamic vinegar.
- 7 .) You're done! Serve this over some quinoa* and stick in some pretty crostini.
Wild Rice Pilaf

Bring 3½ cups of lightly salted water to a boil
- ½ cup wild rice
- 1 cup long grain brown rice
- 1 med onion, chopped
- 3/4 cup diced celery, about ¼-inch pieces
- 2 cups sliced crimini mushrooms
- 1 medium green apple, diced into ¼ -inch pieces
- 4 medium cloves garlic, minced
- ½ cup chopped walnuts
- 6 dried apricots, coarsely chopped
- ½ cup raisins
- ½ cup chopped fresh parsley
- 2 TBS chopped fresh sage (or 2 tsp dried sage)
- 3 TBS chopped fresh thyme (or 1 TBS dried thyme)
- ½ TBS fennel seeds
- 3/4 cup + 1 TBS chicken broth
- 2 TBS extra virgin olive oil
- salt and black pepper to taste

Cajun Scallops & Mango Salsa

- 2 medium tomatoes, seeded and chopped
- 1 mango, peeled and chopped
- 1 jalapeno, seeded and chopped
- 1/2 cup fresh cilantro leaves, chopped

- 1 1/2 lb sea scallops
- olive oil cooking spray
- 1/2 tsp sea salt

Wild Mushroom Pasta Sauce

Crumble the dried mushrooms into a glass bowl or measuring cup and pour the boiling broth over them
- 1 ½ Ounce Package Wild Mushrooms
- 1 cup Chicken, vegetable or beef broth, boiling
- 1 cup White Wine
- 2 tbsp. Butter, divided
- 3 8- Ounce Packages Of White Button Or Portobello Mushrooms, washed and chopped
- 4 large Shallots, minced
- 4 large Cloves Of Garlic, minced
- 2 tbsp. Chopped Sage
- 3 tbsp. Flour
- ½ cup Chopped Flat-Leaf Parsley
- Salt And Fresh Ground Black Pepper
Greens and Quinoa Pie

1. Place quinoa in small saucepan, and toast over medium heat 2 to 3 minutes, or until almost dry
- 1/2 cup quinoa, rinsed and drained
- 1 large bunch chicory (1 to 1 1/4 lb.), cut into bite-sized pieces (bottom 1 1/2 inches of hard stems removed)
- 1 head romaine lettuce, shredded
- 3 Tbs. olive oil, divided
- 2 medium onions, thinly sliced (2 cups)
- 2 green onions, thinly sliced (1/4 cup)
- 1/4 cup chopped fresh dill
- 1/4 cup crumbled feta cheese, preferably Greek (1 oz.)
- 1/4 cup grated aged goat cheese or Swiss cheese (1 oz.)
- 3 eggs, lightly beaten
Sausage, pepper, onion, potato bake

- 1 onion, chopped
- 2 bell peppers, chopped
- 4 potatoes, chopped
- 2 T olive oil
- Seasonings of your choice
- Toss all together, place in a 375 oven for 1 hour.
- Simple and delicious.
- Play around with it and make it your own.
