"Cauliflower Rice" with Fried Onions and Sumac

Chop onion into very small dice
- 1 T Olive Oil
- 1 small Onion, diced small
- ½ large Head Cauliflower, chopped in food processor or grated by hand so the texture resembles rice
- Salt And Fresh Ground Black Pepper To Taste
- Sumac For Seasoning (Optional, could also use sweet paprika or even Spike Seasoning.)
Oatmeal Protein Smoothie

- 1/4 cup uncooked oatmeal
- 1 Tbsp Almond Butter
- 1 Scoop vanilla protein powder
- 1 Tbsp Agave
- 1 Tbsp flax seeds
- 1 Cup almond milk
- 1/2 tsp cinnamon
- ice
Apple Crisp Muffins

Preheat oven to 350 F. Grease muffin tin or spray paper liners to prevent sticking and set aside
- 1 ½ cups whole wheat pastry flour
- ½ cup rolled oats
- 2 tsp baking powder
- 1 tsp baking soda
- ½ cup raw sugar
- ¼ cup brown sugar
- 2 tsp cinnamon
- ¼ tsp ground ginger
- a dash of nutmeg
- ¼ tsp salt
- 1 cup unsweetened applesauce
- 1 cup apple, diced
- ¼ cup pure maple syrup
Baked Spaghetti Squash Lasagna Style

1. Preheat oven to 325 degrees F (165 degrees C)
- 1 Spaghetti Squash, halved lengthwise and seeded
- 1 Onion, chopped
- 2 tbsp. Minced Garlic
- 2 (14 ounce) Cans Stewed Tomatoes
- 1 tbsp. Dried Basil
- 1 Cube Vegetable Bouillon
- Black Pepper To Taste
- 1 (15 ounce) Can Black Olives, chopped
- 1 cup Shredded Mozzarella Cheese
- 1 cup Shredded Parmesan Cheese
Polenta, Onion and Gorgonzola Pizza

Bring lightly salted water to a boil in a medium pot
- ¾ cup polenta
- 2 ½ cups water
- 1 TBS chicken or vegetable broth
- 3 medium onions, cut in half and sliced thin
- 4 cloves garlic, minced
- 1 TBS chopped fresh thyme
- 4 oz gorgonzola cheese
- salt and black pepper to taste
Balsamic chicken and BBQ pulled pork

- Balsamic Sticky chicken
- 1/4 C Balsamic Vinegar
- 1 heaping T of Dijon mustard
- Thyme, rosemary, garlic - dried. I don't measure them - just a couple of pinches - to taste
- sliced sweet onions - 1 med - large
- a large pack of chicken thighs (I used drumsticks)
- put the chicken thighs into the crockpot
- combine the vinegar, spices and mustard and mix well
- Pour vinegar mixture into the chicken
- Throw the onions on top and mix together. I make sure all the chicken pieces are well coated. A little of the vinegar mix goes a long way. Put on low for 8 hours and voila! Serve with noodles, rice, veggies whatever.

- CROCK POT PULLED PORK
- 2 onions, sliced thin
- 2 Tbs brown sugar
- 1 Tbs paprika
- 2 tsp salt
- ½ tsp black pepper
- 1 (4-6 lb) boneless pork butt or shoulder
- ¾ cup cider vinegar
- 4 tsp Worcestershire sauce
- 1 ½tsp crushed red pepper flakes
- 1 ½tsp sugar
- ½ tsp dry mustard
- ½ tsp garlic salt
- ¼ tsp cayenne pepper
- Place onions in crock-pot. Combine brown sugar, paprika, salt and pepper;
- rub over roast. Place roast on top of onions.
- Combine vinegar, Worcestershire, red pepper flakes, sugar, mustard, garlic
- salt and cayenne; stir to mix well. Drizzle about 1/3 of vinegar mixture
- over roast. Cover and refrigerate remaining vinegar mixture.
- Cover crock-pot; cook on low 12-14 hours. Drizzle about 1/3 of reserved
- vinegar mixture over roast during last ½ hour of cooking.
- Remove meat and onions; drain. Chop or shred meat and onions. Serve with
- remaining vinegar mixture.
- ***NOTE: We reduce the peppers/chili's a little and add in more vinegar for a more authentic lexington bbq flavor.
Spicy Roasted Cauliflower Sealed with a Kiss

Preheat oven to 425 degrees Farenheit
- 1 Small Head Cauliflower Cut into Florets (1 – 2 pounds before cleaning)
- 1 1/2 Teaspoons Curry Powder
- 1/2 Teaspoon Cumin
- 1/2 Teaspoon Garlic Powder
- 1/4 Teaspoon Ginger Powder
- Pinch of Salt (to taste)
- 2 Tablespoons Olive Oil
- 1/4 Cup Sliced Almonds (toasted)
- 1 Lime Cut into Supremes (directions to follow)
Ziti with Chicken and Broccoli in White Wine Cheddar Sauce

To make the garlic paste, roast 2-3 heads of garlic
- 8 oz. Ziti Or Other Tube Pasta
- 1 ½ tbsp. Butter
- ¼ cup Roasted Garlic Paste (See Directions Below)
- 1 ½ tbsp. Flour
- ¼ cup Dry White Wine
- 1 cup Chicken Broth
- 2 cups Fresh Broccoli Florets, blanched or steamed until tender
- 1 Boneless, skinless chicken breast, grilled and cut into bite-sized pieces
- ¾ cup Shredded White Cheddar Cheese
- Salt And Pepper
Bean Toasts with Herbs and Eggs

Set the oven to a low heat, just enough to keep plates warm
- 4 Half-Inch Thick Slices Country Bread
- Olive Oil
- ½ small Onion Cut Into ¼-Inch Dice
- 1 Big Clove Garlic, peeled and crushed
- 2 tsp. Finely Chopped Herbs, such as rosemary, thyme, and sage
- 1 cup Cannellini Beans, drained
- 1 tbsp. Butter
- Salt
- Pepper
- 2 Eggs
- Pecorino Romano Or Parmesan To Garnish
Bourbon Chicken

- 2 Lbs Boneless/Skinless Chicken Breasts, cut into bite-size pieces
- 1-2 tbsp. Olive Oil
- 1 Garlic Clove, crushed
- ¼ tsp. Ginger
- ¾ tsp. Crushed Red Pepper
- ¼ cup Apple Juice
- ⅓ cup Light Brown Sugar
- 2 tbsp. Ketchup
- 1 tbsp. Cider Vinegar
- ½ cup Water
- ⅓ cup Soy Sauce
