- 3/4 lb halibut cut into 2 steaks
- 1/4 cups light vegetable broth
- 1/4 cup mirin rice wine*
- 3 medium cloves garlic, chopped
- 1 TBS tamari (soy sauce)
- 1 TBS fresh lemon juice
- 1 TBS minced fresh ginger
- 2 cups fresh shitake mushrooms, sliced 1/4-inch thick
- 1 cup coarsely chopped scallion
- salt and white pepper to taste
- *mirin is a sweet Japanese rice wine without the alcohol content
Potato Salad with Herbed Dijon Vinaigrette

- 1/4 Cup Extra Virgin Olive Oil

Eggplant and Pine Nut Rolled Lasagna

Boil noodles in salted water until al dente
- Variation Ideas:
- 8 Lasagna Noodles
- 1 Eggplant
- Olive Oil

- 2 Slices Bread, toasted (or prepared breadcrumbs)

Simple Fried Rice with Japanese Seven Spice

Start the rice in your rice cooker
- 1 Cup Brown Rice, dry
- 2 Cups Water
- 1-2 Tbs Vegetable Oil
- 1 Package Wildwood Baked Tofu, sliced into rectangles (or whatever your favorite tofu is)
- 1 Stalk Broccoli, chopped into florets
- 2-3 Carrots, peeled and chopped into chunks
- 2 Tbs Earth Balance
- 2 Tbs Tamari or Soy Sauce
- 1 Tbs Rice Vinegar
- Japanese Seven Spice, to taste
- 2-3 Tbs Toasted Almonds
Baked Garlic Rice Pilaf

- 2 tbsp. Butter
- 3 Cloves Garlic, minced or pressed
- 1 cup Long-Grain White Rice
- 2 ½ cups Chicken Broth, divided
- ½ tsp. Salt
- ½ tsp. Pepper
- Squeeze Of Lemon Juice
Crockpot meatloaf

- Slow Cooker Meatloaf (can't get any easier than that, right??)
- 2 2 2 eggs
- 3/4 3/4 3/4 cup milk
- 2/3 2/3 2/3 cup seasoned bread crumbs
- 2 2 2 teaspoons dried minced onions
- 1 1 1 teaspoon salt
- 1/2 1/2 1/2 teaspoon rubbed sage
- 1 1/2 1 1/2 1/2 pounds ground beef
- 1/4 1/4 1/4 cup ketchup
- 2 2 2 tablespoons brown sugar
- 1 1 1 teaspoon ground mustard
- 1/2 1/2 1/2 teaspoon Worcestershire sauce
- 15 a small mixing bowl, whisk the ketchup, brown sugar, mustard & worcestershire sauce. Spoon over the meatloaf. Cook 15 minutes longer or until heated through. ******I usually double the sauce recipe and heat it in a pan on the stove.
