Crunchy Fudge Drops

- 1/2 cup semisweet chocolate chips
- 1/2 cup butterscotch chips
- 1/2 cup plus 2 TBSP granola with raisins
- 1/2 cup chopped pecans
Asian Chicken Tenders

Cut the chicken into strips
- 1 Lb Chicken Thighs Or Breasts, boneless and skinless
- 2 Eggs
- 1 T Gf Soy Sauce
- 1 T Chili-Garlic Sauce
- Juice Of ½ Lime
- ½ T Minced Ginger
- 2 C Breadcrumbs
- 1 T Garlic Powder
- Salt And Peppersweet And Sour Sauce
- This Is Sooo Easy, I wish I'd tried it earlier. Recipe from here, but with a bit more sugar. I might add some hot sauce next time.
- ⅓ C Rice Wine Vinegar
- 6 T Brown Sugar
- 1 T Ketchup
- 2 T Gf Soy Sauce
- 3 T Cornstarch Mixed With 5 T Cold Water
The Loaded Bowl

- Dressing:
- 3 cups quinoa, rinsed and drained
- 1-15 oz can Eden Organic Black Beans, rinsed well and drained
- 1 pint cherry tomatoes, halved
- 1 cup fresh cilantro, chopped
- 2 avocados, pitted and peeled
- Fresh lemon juice
- Sea salt and ground pepper
- juice of 4 limes
- zest of 1 lime
- 1/4 cup EVOO
- 1/4 cup white vinegar
- 2 or 3 cloves garlic, minced
- sea salt, ground pepper
5-Spice Chicken in a Bowl

Chop onion and garlic and let sit for 5 minutes to bring out their hidden health-promoting benefits
- 2 boneless, skinless chicken breasts (6 oz each), cut in 2-inch pieces
- 4 cups chicken broth
- ½ inch sliced fresh ginger, sliced (or ½ tsp dried ginger)
- 6 whole cloves
- 2 cinnamon sticks
- 5 star anise
- ½ tsp dried fennel seeds
- 1 medium-sized onion, chopped in big pieces
- 3 cloves garlic, chopped in big pieces
- 6 whole medium dried shiitake mushrooms
- 1 lb green beans, ends cut off
- ½ cup minced scallions

Fresh Herbed Chicken Breasts

Preheat broiler on high. Place ovenproof metal pan under broiler to get hot
- 4 boneless chicken breasts with skin on
- 2 medium cloves garlic, pressed
- 1 TBS fresh squeezed lemon juice
- 2 tsp chopped fresh sage
- 2 tsp chopped fresh thyme
- 1 tsp chopped fresh rosemary
- 1/4 cup chicken broth
- salt and cracked black pepper
Apricot Chipotle Chicken

Put chipotle in adobo sauce in a blender and puree until very smooth
- 1 – 7 Ounce Can Chipotle In Adobo Sauce
- 6 Chicken Thighs
- 1 tbsp. Olive Oil
- 1 tbsp. Butter
- 6 Fresh Apricots – Cut In Half Then Each Half Sliced In 4 Pieces
- 4 Green Onions – Thinly Sliced – Reserve About 2 Tablespoons Of The Greens For Garnish
- 1 Garlic Clove – Minced
- Juice And Finely Grated Zest Of 1 Lemon
- ½ cup Plus 1 Tablespoon Gluten Free Chicken Stock
- 2 tsp. Corn Starch Or Arrow Root
- Salt & Pepper
