Cabbage Casserole with Leeks, Ricotta, and Pine Nuts

1. Blanch cabbage leaves in large pot of boiling salted water 7 minutes, or until softened
- 12 large leaves savoy cabbage
- 3 tsp. olive oil, divided
- 3 small leeks, halved, white and light green parts cut into 1/2-inch-thick pieces (1 cup)
- 1/2 cup low-sodium vegetable broth
- 3 slices lemon
- 2 cloves garlic, minced (2 tsp.)
- 1 15-oz. can chopped tomatoes
- 3 Tbs. chopped fresh parsley
- 8 oz. low-fat ricotta cheese (1 cup), drained
- 3 Tbs. toasted pine nuts

- 1 whole sweet onion, diced

- 1/2 6-oz. jar water-packed artichoke hearts, rinsed, drained, and sliced
- 1/2 cup small pear or grape tomatoes, halved or quartered
- 1/3 cup chopped pitted kalamata olives, optional
- 1/4 cup finely chopped fresh parsley
- 1/4 cup prepared balsamic vinaigrette or Lemon-Basil Vinaigrette
- 2 –3 drops sriracha sauce
- 2 cups baby arugula
- 1 oz. crumbled feta cheese, optional

- 1 cup sorghum flour
- 1/2 cup tapioca starch (sometimes called tapioca flour)

- 1/2 teaspoon baking soda
- 3/4 teaspoon xanthan gum
- 1/2 teaspoon fine sea salt
- 1 teaspoon cinnamon
- 1 cup brown sugar
- 1/3 cup light olive oil or coconut oil
- 1 teaspoon fresh lemon or lime juice
- 2 free-range organic egg whites, beaten or egg replacer (1/4 cup liquid)

- 10-15 Baby Red Potatoes, cleaned
- ½ Sweet Yellow Onion, diced
- ¼ Red Bell Pepper, diced
- Garlic Powder, salt and pepper to taste
- 1 Tsp Butter
- Fresh Parsley For Garnish
7-Minute Butternut Squash

Fill the bottom of the steamer with 2 inches of water
- Optional:
- 2 cups butternut squash, or any variety of winter squash, cut into 1-inch cubes
- 3 TBS extra virgin olive oil
- 1 tsp orange juice
- sea salt and pepper to taste
- feta cheese
- chopped fresh rosemary
- 1/2 small onion sliced thin, cooked with the squash
- Also try combining 4 tsp finely minced fresh ginger, 1/2 tsp cinnamon and 2 tsp honey with the olive oil.
