  • 1/2 tsp coarse salt
  • 1 (28 oz) can whole peeled plum tomatoes with juice
  • 2 1/2 cups low-sodium chicken or vegetable broth
  • 2 Tbsp tomato paste (preferably no-salt added)
  • 1 1/2 cups cooked quinoa (from about 1/2 cup uncooked)
  • 4 large eggs
  • Hot sauce, for drizzling

  • 1 cup wild rice
  • 4 cups No-Chicken broth (vegetarian)
  • 3 tablespoons olive oil
  • 1 1/2 cups red bell peppers, chopped
  • 3/4 cup cashews, coarsely chopped
  • 2 green onions, sliced
  • 3 tablespoons seasoned rice vinegar or 3 tablespoons apple cider vinegar 2 tablespoons olive oil
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1 dash fresh ground pepper
