Cilantro-Jalapeño Latkes with Chipotle Sour Cream

1. Combine first 4 ingredients in a small bowl, stirring well
- 6 tablespoons light sour cream
- 1 tablespoon chopped chipotle chile, canned in adobo sauce
- 3/4 teaspoon grated lime rind
- 1 teaspoon fresh lime juice
- 6 cups shredded peeled baking potato (about 1 1/2 pounds)
- 1 cup grated fresh onion
- 6 tablespoons all-purpose flour
- 1/2 cup chopped fresh cilantro
- 2 tablespoons finely chopped seeded jalapeño pepper

1. In a covered medium nonstick skillet cook potatoes and onion in a small amount of boiling water for 7 minutes
- 4 ounces tiny new potatoes, cut into 1/4-inch slices (1 cup)
- 1/4 cup chopped red onion or onion
- 1/4 cup chopped red, green, or yellow sweet pepper
- Nonstick cooking spray
- 1 cup refrigerated or frozen egg product, thawed or 4 eggs, beaten
- 1/2 teaspoon snipped fresh rosemary or 1/4 teaspoon dried rosemary, crushed
- 1/8 teaspoon salt
- 1/4 cup shredded Swiss cheese (1 ounce)

- 1 stick unsalted butter, plus more for greasing, at room temperature
- 2/3 cup brown sugar
- 1 1/2 teaspoons vanilla extract

- 1 1/3 cups flour
- 1 1/4 cups graham cracker crumbs
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- Heaping 1/3 cup semisweet chocolate chips

- 1 tbsp baking powder

- 1 1/2 cups sugar
- 1 1/2 cups brown sugar

- 3 cups old-fashioned rolled oats
- 2 cups sweetened coconut flakes

Heat oven to 375°F. Spray 8 regular-size muffin cups with cooking spray
- 1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls
- 1/2 cup pizza sauce
- 1/4 cup mini pepperoni slices
- 1/4 lb mild Italian sausage, cooked and drained
- 1/2 cup shredded mozzarella cheese (2 oz)
- vegetarian version - use chopped mushrooms, onions and/or black olives in place of the meat
Hot Cheddar-Mushroom Spread Recipe

In a large bowl, combine the mayonnaise, cheeses, mushrooms and dressing mix
- 2 cups mayonnaise
- 2 cups (8 ounces) shredded cheddar cheese
- 2/3 cup grated Parmesan cheese
- 4 cans (4-1/2 ounces each) sliced mushrooms, drained (can also use 12 oz fresh mushrooms sliced)
- 1 envelope ranch salad dressing mix
- Minced fresh parsley
- Assorted crackers
Red Tomato Salsa

Combine all ingredients except crushed tomatoes in a large bowl; mix well
- 2 tomatoes, diced
- 1 green bell pepper, seeded and diced
- 1 medium onion, diced
- 2-3 cloves garlic, minced
- 2-3 jalapeno peppers, seeded and minced
- 2 Tbsp minced fresh cilantro
- 2 tsp lime juice
- 1 tsp ground cumin or to taste
- 1 tsp dried oregano or to taste
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1/4 tsp ground cayenne pepper (I add a little more)
- 2 c canned crushed tomatoes
