Sweet, Salty, and Spicy Watermelon Refresher

- 1/4 cup fresh lime juice
- 1 tablespoon turbinado sugar
- 2 tablespoons fresh orange juice
- 1 jalapeño or 2 serrano peppers, seeded and minced
- 1/2 teaspoon sea or kosher salt
- 1/4 teaspoon dried crushed red pepper
- 1 small red onion, diced
- 1/2 cup coarsely chopped fresh cilantro
- 2 tablespoons coarsely chopped fresh mint
- 1 small seedless watermelon
- 1 small cantaloupe
- 2 English cucumbers
- 1 jicama
- 2 mangoes
Nutty Caramel Bars

Pre-heat oven to 350 F. Butter a 13" x 9" baking pan; set aside
- 1-1/2 cups butter, divided
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/4 cup honey
- 3/4 cup packed light brown sugar
- 1/4 cup heavy cream
- 1 (12-ounce) can lightly salted mixed whole nuts
Broccoli Cheese Bake

1.Preheat oven to 325 degrees F (165 degrees C)
- 8 cup fresh broccoli
- 1 ⁄2 cup butter
- 2 tbsp all-purpose flour
- 1 small onion, chopped
- 1 1⁄4 cup milk
- 1 salt, to taste
- 4 cup cheese, swiss, shredded
- 2 egg, beaten
- 1 black pepper, to taste
Summer Melon Salsa

In a small bowl, combine the melons, onion, jalapeno, cilantro, lime juice, pepper and salt
- 1/2 c each cubed cantaloupe, honeydew and seedless watermelon
- 1/4 c chopped red onion
- 1 jalapeno pepper, seeded and chopped
- 2 Tbsp minced fresh cilantro
- 1 Tbsp lime juice
- 1/4 tsp pepper
- 1/8 tsp salt

- 1 tablespoon vegetable oil
- 1 pound oyster mushrooms, stems trimmed and large caps halved or quartered
- 1 pound white mushrooms, thinly sliced
- Salt and freshly ground white pepper
- 1 tablespoon unsalted butter
- 2 small shallots, minced
- 1 tablespoon thyme, chopped
- 3/4 cup shredded Comté or Emmental cheese (2 1/2 ounces)
- Buttery Pastry Shell
- 2 cups milk
- 2 cups heavy cream
- 6 large eggs, lightly beaten
- Freshly grated nutmeg
Hazelnut-Mushroom Pilaf

1.Place a large skillet over medium-low heat
- 1 ⁄4 cup butter
- 1 ⁄2 cup uncooked long-grain rice
- 1 ⁄4 cup uncooked orzo pasta
- 1 ⁄2 cup fresh mushrooms, sliced
- 1 ⁄2 cup onion, chopped
- 1 ⁄4 cup celery, minced
- 2 cup no-chicken broth
- 2 tbsp fresh parsley, chopped
- 1 ⁄4 tsp dried marjoram
- 1 ⁄4 tsp black pepper, ground
- 1 ⁄2 cup toasted hazelnut, chopped
HEARTY POTATO SOUP

1. In a Dutch oven, cook the potatoes, carrots and celery in water until tender, about 15-20 minutes
- 6 medium potatoes, peeled and diced
- 2 carrots, chopped (next time I’ll add more carrots)
- 6 celery ribs, chopped
- 8 cups water
- 1 onion, chopped
- 6 tablespoons butter, cubed
- 6 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1-1/2 cups 2% milk (I used skim)

- 1 sweet potato, peeled and diced
- 1 onion, finely chopped
- 2 large garlic cloves, finely chopped
- 1 Tbsp chili powder
- 1/2 tsp coarse salt
- 4 cups low-sodium chicken or vegetable broth
- 2 (15.5 oz) cans black beans, rinsed and drained
- 1/4 cup grated cheddar cheese
- Toppings: 1 avocado, diced; sliced radishes; cilantro
Cookies and Cream Cookies

1.Preheat to 350 2.Cream together butter and sugar until fluffy and light
- 2 sticks butter (1 cup)
- 1 1/4 cup white sugar
- 2 eggs
- 1 1/2 t. pure vanilla
- 1/2 cup dark cocoa powder (I used Hershey's Special Dark), but if you don't like dark, just use regular cocoa powder.
- 2 1/4 cups AP flour
- 1/4 tsp Kosher salt
- 1 teaspoon baking powder
- 1 cup mini semi-sweet chocolate chips
- 12 oz. Hershey's Cookies and Creme drops (if you can't find these because they are a new item use coarsely chopped Cookies and Cream Kisses OR Hershey's Cookies and Creme Bars)
Ranch Oyster Crackers

- 1/2 teaspoon lemon pepper
- 1 1/2 teaspoon dill weed
