1. Prepare outdoor grill for direct grilling over medium-high heat
- 2 * 2 cup(s) (loosely packed) arugula or watercress
- 2 * 2 tablespoon(s) balsamic vinegar
- 1 * 1 loaf(s) (about 1 -inch think) focaccia or ciabatta bread
- 4 * 4 large (about 1 pound) portobello mushrooms, stems removed and each cut in half
- 2 * 2 medium (about 8 ounces each) tomatoes, cut into 3⁄4-inch-thick slices
- 2 * 2 tablespoon(s) extra virgin olive oil
- * Salt and coarsely ground black pepper
- 4 * 4 ounce(s) mozzarella cheese, thinly sliced
Candy Cane Chocolate Loaves

In a large bowl, beat butter and brown sugar until crumbly, about 2 minutes
- TOPPING:
- 1/4 cup butter, softened
- 1-2/3 cups packed brown sugar
- 4 egg whites
- 2 eggs
- 3/4 cup strong brewed coffee
- 1/2 cup vanilla yogurt
- 1/4 cup canola oil
- 1 tablespoon Spice Island® Pure Vanilla Extract
- 1/4 teaspoon peppermint extract
- 3-1/2 cups all-purpose flour
- 3/4 cup baking cocoa
- 1-1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1-1/2 cups buttermilk
- 1 cup (6 ounces) miniature semisweet chocolate chips

- 2 tablespoons balsamic vinegar
- 2 tablespoons sugar
- 3 drops almond extract
- Pinch salt
- Generous pinch coarsely ground black pepper
- 4 tablespoons butter
- 4 slices Vanilla Pound Cake recipe or store-bought
- 4 scoops vanilla ice cream
- 1/4 cup sliced almonds, toasted, for garnish
Caprese Stuffed Baked Potatoes

1. Heat oven to 400 degrees
- sea salt
- 8 small to medium potatoes, washed and dried
- 1 large bunch of basil leaves
- 5 ounces sun-dried or roasted tomatoes in oil, chopped
- 10 fresh mozzarella, chopped
- 2 tbs olive oil
Olive Garden Lasagna Rollata Al Forno

Blend first two marinara ingredients together in a large saucepan
- Ingredients:
- Five Cheese Marinara Sauce
- 2 cups marinara sauce
- 2 cups alfredo sauce
- 1/2 cup ricotta cheese
- 1 cup italian blend shredded cheese
- 1/4 cup red wine
- Filling
- 1 egg
- 15 ounces whole milk ricotta cheese
- 1 (8 ounce) mozzarella cheese, grated
- 1/2 cup parmesan cheese, grated
- 1/2 cup asiago cheese, grated
- 1/2 cup romano cheese, grated
- 1 tablespoon italian seasoning, blend
- salt and pepper, to taste
- Noodles
- 1 lb lasagna noodle
- 1/2 cup Italian breadcrumbs
Grilled Portobello Mushrooms Stuffed with Parmesan Mashed Potatoes

1-Brush the grill grates lightly with the safflower oil, Prepare a hot fire in a gas or charcoal grill
- Safflower Oil or canola oil, for oiling the grill
- 1 recipe Classic Mashed Potatoes (see recipe)
- 1/4 c. olive oil
- 2 T. balsamic vinegar
- 8 portobello mushroom caps, cleaned and stems removed
- 1 t. salt
- 1/2 t. freshly ground black pepper
- 1 c. sour cream
- 1/4 c. grated Parmesan cheese
- 2 scallions, trimmed and chopped
Sour Cream Enchiladas

Warm soup and milk. Bring to barely a boil
- 1 dozen corn tortillas
- 1 can mushroom soup plus 1 cup milk
- diced onions
- 1 cup sour cream
- 1 can green chilis
- 1/2 lb shredded cheese (any kind)
S'Mores Bars

- Crust:
- 14 whole graham cracker boards, crushed (2-1/4 cups crumbs)
- 3 tablespoons sugar
- 1/4 teaspoon salt
- 6 tablespoons(3/4 stick) butter, melted
- Brownie:
- 6 ounces bittersweet chocolate, chopped
- 3/4 cup(1-1/2 sticks) butter
- 3 eggs
- 1 1/4 cups sugar
- 1 cup all-purpose flour
- 1 teaspoon salt
- 2 teaspoons vanilla
- Topping:
- 1 jar(7.5 ounces) marshmallow cream (about 1-1/2 cups)
- 2 tablespoons milk
- 1 cup mini chocolate kisses
- 3 whole graham cracker boards, broken up
Chubby Hubby Brownies

Sift together the flour, unsweetened cocoa powder and kosher salt
- 15 Chocolate covered peanut butter filled pretzels, cut in half
- 3/4 cup all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon kosher salt
- 3/4 cup packed light brown sugar
- 3/4 cup sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 1 Tablespoon vanilla extract
- 2 large eggs, at room temperature
- Peanut Butter Frosting
- 1/2 cup powdered sugar, sifted
- 1/2 cup creamy peanut butter
- 4 Tablespoons unsalted butter, softened
- 4 Tablespoons heavy whipping cream
- 1/2 teaspoon vanilla extract
- Chocolate Covered Peanut Butter Filled Pretzels, cut into small pieces for decoration (however many you like)
Vegetarian Chili with Cinnamon Spiked Yogurt

Sweat the onions and shallots in some olive oil in a large pot over medium-high heat
- 1 large yellow onion, diced
- olive oil
- 2 shallots, diced or sliced thin
- 8 cloves of garlic, rough chopped
- 1-2 tablespoons of ginger, peeled and grated
- 2 jalapenos peppers, seed and ribs removed and diced fine
- 2 tsp ground cumin
- 2-4 tbsp chili power (depending on how much spice you like)
- 1-2 chipotle peppers (from a can with adobo or dried and rehydrated), chopped (in a pinch, a tbsp or two of smoked paprika adds a nice smokey kick)
- sea salt
- 1 28oz can of crushed tomatoes
- 1 750ml (26oz) bottle of favourite dark ale
- water
- 1 can chickpeas
- 2 cups lentils (I used brown, you can use your favourite or a mixture)
- 1/3 cup potted barley
- 1/3 cup bulgur
- 1 large sweet potato, cut into small cubes
- 1 cup plain greek yogurt
- 1 tsp good quality ground cinnamon
- Topping options; fresh chopped cilantro, reserved jalapeno, minced red onion, feta cheese, olive oil
