Melt-in-Your-Mouth Sugar Cookies

In a large mixing bowl beat butter and shortening with an electric mixer on medium to high speed for 30 seconds
- 1/2 c butter, softened
- 1/2 c shortening
- 2 c sugar
- 1 tsp baking soda
- 1 tsp cream of tartar
- 1/8 tsp salt
- 3 egg yolks
- 1/2 tsp vanilla
- 1 3/4 c flour
- 1 c Andes peppermint baking chips (optional)
Boursin Cheese Scalloped Potatoes

1. Preheat an oven to 400 degrees and arrange a rack in the center position
- 1 Cup - Heavy Cream
- 1 Cup - Half and Half
- 1-5 Ounce Package - Boursin Cheese with Herbs And Garlic, Broken Into Small Chunks
- 3 Pounds - Russet Potatoes, Peeled And Sliced
- 2 Tablespoon - Fresh Chives, Chopped
- To Taste - Salt

Skinny Veggie Pizza

Arrange oven racks in top and bottom thirds of oven
- 4 flour tortillas
- 4 c. baby spinach
- 1 medium red pepper
- 1 medium zucchini
- 2 tsp. minced garlic
- 2 tsp. olive oil
- salt
- black pepper
- 3/4 c. marinara sauce
- 4 oz. goat cheese
- 1/4 c. finely grated Parmesan cheese
- 1/4 c. fresh basil leaves
Enchiladas de Queso fresco

- 1/2 onion (chopped)
- 1-12oz can Enchiladas Red sauce

- 1/2 cup Pictsweet frozen Chopped Onions (I used onion flakes, and only about 1/4 cup)
- 3 cups Pictsweet frozen Chopped Broccoli

- 6 oz. cottage cheese
- 1 (8 1/2-oz.) box corn bread muffin mix

- 3 * 3 cups all-purpose flour
- 1 * 1 teaspoon salt
- 1 * 1 teaspoon baking soda
