Chinese Drumsticks

With a sharp paring knife cut around bone at small end of upper wing portions
- 30 upper wing portions
- 2 tablespoons lite soy sauce
- 2 tablespoons dry sherry
- 2 teaspoons fresh grated ginger
- 1/4 teaspoon sugar
- 2 teaspoons chinese five spice powder
- 4 tablespoons cornstarch
Jack Quesadillas w/pear salsa

To prepare salsa, combine pears through jalapeno pepper in a bowl; cover and chill
- pear salsa:
- 4 cups chopped, peeled anjou pear (about 2 lbs.)
- 1/3 c chopped red onion
- 2 tbs chopped fresh or 2 tsp dried mint
- 1 tbs. grated lime rind
- 2 tbs fresh lime juice
- 1 tsp granulated sugar
- 1/2 tsp freshly ground pepper
- 1 jalapeno pepper, seeded and chopped
- quesadillas:
- 8 8 inch fat free flour tortillas
- 2 cups shredded monterey jack cheese
- 1/2 c chopped green onions

Make the special sauce by dissolving the sugar in water in a small bowl
- 3 tablespoons oil
- 2 boneless skinless chicken breasts
- 1 cup water chestnut
- 2/3 cup mushroom
- 3 tablespoons chopped onions
- 1 teaspoon minced garlic
- 4-5 leaves iceberg lettuce
- Special Sauce
- 1/4 cup sugar
- 1/2 cup water
- 2 tablespoons soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons ketchup
- 1 tablespoon lemon juice
- 1/8 teaspoon sesame oil
- 1 tablespoon hot mustard
- 2 teaspoons water
- 1-2 teaspoon garlic and red chile paste
- Stir Fry Sauce
- 2 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1/2 teaspoon rice wine vinegar
Blueberry Muffins

Preheat oven to 375 degrees
- 1 stick butter -- room temperature
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 1/2 cups blueberries (mash 1/2 cup with fork)
- 2 cups flour
- 1/2 cup milk
- 1 tablespoon sugar mixed with 1/4 teasp. nutmeg
Shrimp Toast

Mix shrimp, ginger, water chestnuts with beaten egg, corn starch, sherry, salt and pepper
- 1/2 pound uncooked shrimp peeled, deveined and 5 waterchestnuts or celery minced
- 1 teaspoon ginger root finely minced
- 1 egg lightly beaten
- 1 1/2 teaspoons cornstarch
- 1 teaspoon sherry
- 1/2 teaspoon salt
- dash pepper
- 4 slices white bread
- oil fordeep frying

EASY from a yellow boxed cake mix
- COMBINE FOR TOPPING:
- 1 package yellow cake mix
- 1 package instant vanilla pudding (small)
- 4 eggs
- 1 cup sour cream
- 1 teaspoon vanilla
- 1/4 cup oil
- 3/4 cup water
- 1/2 cup sugar
- 1 tablespoon cinnamon
- 1/2 cup ground nuts
French Toast

- 2 whole Pie Pumpkins
- 1 quart Vegetable Or Chicken Stock
- 1/2 cups Heavy Cream
- 1/3 cups Maple Syrup
- Dash Of Nutmeg
- Salt To Taste
- Extra Cream, For Serving
Country White Potato Bread

Directions given for both 1 lb
- Measurements to make a 1 1/2 pound loaf:
- 2 cups bread flour
- 1/3 cup potato flour (potato starch) or 1/3 cup of bread flour
- 1/3 cup mashed potatoes, room temperature
- 7/8 cup (1 cup minus 2 Tbsp. water)
- 1 1/2 Tbsp. honey
- 1 teas. salt
- 2 Tbsp. unsalted butter, room temperature and cut into bits
- 1/3 cup instant nonfat dry milk solids
- 3/4 - 1 teas. active dry yeast
- 1 . Procss the ingredients according to the manufacturer's instructions for a basic bread setting.
- 2 . Remove the bread from the bread pan to a rack to cool.
- Wrap in aluminum foil to store.
- 3 cups bread flour
- 1/2 cup potato flour
- 3/4 cup mashed potatoes
- 1 cup water
- 1 1/2 Tbsp. honey
- 1 1/2 teas. salt
- 3 Tbsp. unsalted butter
- 1/3 cup instant nonfat dry milk solids
- 1 1/2 teas. active dry yeast

- 2 cups hot water
- 1 tablespoon sugar
- 1 1/4 oz. envelope active dry yeast
- 5-6 cups all purpose flour
