Italian tomato and bread salad
- 1/2 baguette (about 12 inches long)
- 1 large garlic clove, mashed
- Olive oil for brushing
- 6 medium to large tomatoes, cut into large chunks
- 1/2 medium onion, chopped
- 3 tablespoons coarsely chopped fresh basil
- 4 tablespoons balsamic vinegar
- 1/2 cup olive oil
Buffet Chicken Cacciatore

Found this recipe in the Chicago Tribune, nearly 25 years ago
- olive oil
- 2 large onions, coarsely chopped
- 3 large garlic cloves, coarsely chopped
- 3 large frying chickens. cut up
- salt & pepper
- Two 28 oz cans Italian Whole Plum Tomatoes
- 1 teasp sugar
- 1/2 teasp red pepper flakes
- 1/2 teasp salt
- 1/4 teasp black pepper
- 1/2 teasp oregano
- 1/2 teasp basil
- 1/2 teasp thyme
- 1 bay leaf
- 3 green bell peppers cut into strips
Basque Tuna Baguette

Cut bread horizontally
- DRESSING:
- 1 10-12" baguette
- 3 slices provolone cheese
- 2 cups fresh torn spinach
- 1 can tuna in water, canned
- 2 large plum tomatoes -- thinly sliced
- 3 radishes -- sliced
- 6 black kalmata olives -- sliced
- fresh ground pepper
- 1 clove garlic
- 1 cup fresh basil
- 1/4 cup olive oil
- 1 teaspoon capers
- 1 tablespoon balsamic vinegar
- 2 teaspoons dijon mustard
- Process all dressing ingredients in food processor fitted with metal blade. Set aside.
Banana Bundt Cake

- 1/3 cup butter or margarine, softened
- 1 1/4 cup sugar
- 2 eggs
- 1 teaspoon pure vanilla
- 3 medium ripe bananas, mashed
- 2 cups flour
- 1 1/4 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sour cream
- 3/4 chopped walnuts (or pecans)
Butter Drop Cookies (dipped in chocolate)

Preheat the oven to 375º F
- 2 cups flour
- 1 tsp. baking powder
- 3/4 tsp. salt
- 1 cup sugar
- 3/4 cup (11/2) sticks butter, softened
- 1/4 cup milk
- 11/2 tsp. vanilla
- 1 egg

Preheat oven to 350 degrees
- FROSTING:
- 1/2 cup flour
- 1/2 cup sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon baking soda
- dash salt
- 1/3 cup vegetable oil
- 1 tablespoon vegetable oil
- 1 egg, beaten
- 1 1/2 teaspoons vanilla
- 3/4 cup carrots -- grated
- 3 ounces cream cheese
- 2 tablespoons butter
- 1/4 teaspoon vanilla
- 6 tablespoons confectioner's sugar
Chicken Salad with toasted almonds & grapes

In a large bowl, mix all ingredients except lettuce
- 2 cups cooked chicken, cut into small pieces
- 1 cup grapes
- 1 cup celery, diced
- 1/2 cup mayonnaise
- 2 tablespoons lemon juice
- 1/2 teaspoon salt
- 1/4 cup sliced toasted almonds

Strawberry and Cream Crepes

In a blender place all ingredients, except flour
- Crepes:
- 4 eggs
- 1/2 c butter, melted
- 1/3 c sugar
- 1 c flour
- 1 c milk
- 1/4 c water
- 1 tsp. vanilla
- dash of salt
- Cream Filling:
- 1 c sour cream
- 1 8oz pkg. cream cheese SOFTENED
- 1 c powdered sugar

1 Thaw puff pastry 20 minutes
- 1 sheet Pepperidge Farm frozen Puff Pastry
- 1/3 cup pesto sauce (store-bought or homemade)
- 1/2 cup grated Parmesan cheese
- 1 egg beaten with 1 tsp water

This recipe is PERFECTION, but it is also a L-O-N-G process
- SAUCE FOR TETRAZZINI:
- 3 pounds frying chicken
- 2 cups hot water
- salt, as suggested
- 1/2 pound broad egg noodles
- 2 tablespoons melted butter
- 2 tablespoons grated Italian cheese
- 1/2 pound fresh mushrooms -- sauteed in butter
- bit pepper
- several slivers garlic
- additonal salt, pepper and cheese
- 3/4 cup all-purpose flour
- 1/2 cup melted butter
- 1 cup warm milk or cream
- 2 cups warm chicken stock
- 1 1/2 teaspoons salt
- 2 tablespoons dry sauterne or sherry wine
