  • SALSA INGREDIENTS:
  • 1 lb. fresh swordfish steak
  • 1 1/2 T olive oil
  • 1 lemon, juiced
  • 1 clove garlic, minced
  • 1 1/2 tsp. kosher salt
  • 1/2 tsp. fresh pepper
  • 1 tsp. Old Bay Seasoning
  • 1 mango, peeled and chopped into small cubes
  • 1 lime, juiced
  • 1/2 c. seedless cucumber, chopped
  • 1/2 c. grape tomatoes, chopped
  • 1/4 c. purple onion, chopped ( I used a sweet onion)
  • 1/4 c. avacado, chopped
  • 3 T. fresh cilantro, chopped
  • 1/2 tsp. kosher salt

  • 3 garlic cloves, thinly sliced
  • 1/3 cup chopped fresh basil
  • 1/4 tsp. coarse salt
  • Freshly ground pepper
  • 2 T. olive oil
  • Risotto:
  • 2 cups fresh corn kernels
  • 2 T. olive oil
  • 2 green onions, chopped ( I have used 1/2 cup diced onions)
  • 1 cup Arborio rice
  • 3 to 4 cups hot reduced-sodium vegetable or chicken broth
  • 1/3 cup grated Parmigiano Reggianno cheese
  • Chopped tomatoes (optional)
