Grilled Swordfish with Mango Salsa

- SALSA INGREDIENTS:
- 1 lb. fresh swordfish steak
- 1 1/2 T olive oil
- 1 lemon, juiced
- 1 clove garlic, minced
- 1 1/2 tsp. kosher salt
- 1/2 tsp. fresh pepper
- 1 tsp. Old Bay Seasoning
- 1 mango, peeled and chopped into small cubes
- 1 lime, juiced
- 1/2 c. seedless cucumber, chopped
- 1/2 c. grape tomatoes, chopped
- 1/4 c. purple onion, chopped ( I used a sweet onion)
- 1/4 c. avacado, chopped
- 3 T. fresh cilantro, chopped
- 1/2 tsp. kosher salt

- 1 pork tenderloin (1 pound), cut into 1/2-inch slices
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup all-purpose flour
- 2 eggs, lightly beaten
- 2/3 cup seasoned bread crumbs
- 1/2 cup butter, divided
- 2 cups fresh strawberries
- 1 teaspoon minced garlic
- 1/4 cup hot water
- 1 teaspoon chicken bouillon granules
- Sliced fresh strawberries, optional
Cheesy Baked Orzo with Bacon & Peas

1. Heat oven to 400 degrees
- 8 ounces bacon, diced
- 2 cloves garlic, chopped
- 2 T. all-purpose flour
- 2 1/2 cups milk
- 8 oz. shredded Gruyere cheese
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. orzo
- 1 1/2 cups frozen peas, thawed
- 1/4 cup grated Parmesan cheese
Bok Choy and Radishes Recipe

Cut off and discard root end of bok choy, leaving stalks with leaves
- 1 head bok choy
- 2 tablespoons butter
- 1 tablespoon olive oil
- 12 radishes, thinly sliced
- 1 shallot, sliced
- 1 teaspoon lemon-pepper seasoning
- 3/4 teaspoon salt
Turkey Meat Loaf

1. Preheat the oven to 375 degrees
- 1/2 Red bell pepper seeded and coarsely chopped
- 1 medium carrot, coarsely chopped
- 1 medium onion, coarsely chopped
- 1 garlic clove
- 1 T. extra-virgin olive oil
- 1 1/2 pounds ground turkey
- 1/2 pound ground pork
- 1/2 cup bread crumbs
- 2 large eggs
- 1 1/2 tsp. salt
- 1 T. Worcestershire sauce
- 2 T. ketchup
- 8 strips of bacon
Pork Tenderloin with Fresh Corn Risotto

- Pork:
- 2 ( 1 - pound pork) tenderloins
- 3 garlic cloves, thinly sliced
- 1/3 cup chopped fresh basil
- 1/4 tsp. coarse salt
- Freshly ground pepper
- 2 T. olive oil
- Risotto:
- 2 cups fresh corn kernels
- 2 T. olive oil
- 2 green onions, chopped ( I have used 1/2 cup diced onions)
- 1 cup Arborio rice
- 3 to 4 cups hot reduced-sodium vegetable or chicken broth
- 1/3 cup grated Parmigiano Reggianno cheese
- Chopped tomatoes (optional)

- 1/4 cup chopped pecans
- 1/2 teaspoon ground cinnamon

- 1/2 teaspoon salt

- 1 lb. boneless skinless chicken breasts, cut into bite-size pieces
- 1 small zucchini, chopped
- 1 tub (10 oz.) Philadelphia Italian Cheese & Herb Cooking Cream
- 1/2 cup chopped tomatoes
- 2 cups hot cooked orzo pasta
Filet Mignon in Mustard Balsamic Vinegar Sauce

- 1 T. olive oil
- 6 beef tenderloin steaks (filet mignon) each 1-1/2 inch thick. ( I have used as few as 2 filets and very thick ones).
- 1/4 cup chicken broth
- 2 T. balsamic vinegar
- 1 T. Dijon mustard.
