Cheesy Chicken Enchiladas

Excellent light version of enchiladas taken from Cooking Light magazine
- 2-1/2 cups chopped cooked chicken breast.
- 2 cups (8 ounces) preshredded reduced-fat 4-cheese Mexican blend cheese
- 1-2/3 cups plain low-fat yogurt
- 1/3 cup butter, melted
- 1/4 cup chopped onion
- 1 tsp. minced garlic
- 1/4 tsp freshly ground pepper
- 1 (10-3/4 ounce) can condensed reduced-fat, reduced-sodium cream of chicken soup, undiluted (such as Health Request)
- 1 (4.5 ounce) can chopped green chiles, drained
- 8 (8-inch) flour tortillas
- 1 T. canola oil
- Cooking spray
- 1/2 cup (2 ounces) finely shredded reduced-fat sharp cheddar cheese.
- 1/4 cup chopped green onions

- 1 lb. green beans
- 2 tablespoons bacon grease {can substitute 2 tablespoons butter}
- 2 cloves garlic, minced
- 1 large onion, chopped
- 1 cup chicken broth, plus more if needed
- 1/2 cup chopped red bell pepper
- 1/2-1 teaspoon kosher salt
- Ground black pepper
Chocolate Andes Mint Cookies

First made 12/15/2012. Easy and delicious
- 2 eggs
- 1 1/2 sticks of butter
- 2 T. water
- 1 1/2 cups brown sugar
- 2 cups semi sweet chocolate chips
- 2 1/2 cups all purpose flour
- 1 1/4 tsp. baking soda
- 1/2 tsp. salt
- 2 packages of Andes mints (28 to a package)
Chicken Pomodoro

First tried 8/15/2012. Excellent and easy
- 2 boneless, skinless chicken breasts, cut in half and pounded into cutlets.*
- Salt and black pepper
- All-purpose flour
- Nonstick spray
- 2 T. vegetable oil
- 1/4 cup vodka
- 1/2 cup low-sodium chicken broth
- 2 T. fresh lemon juice
- 1/2 cup chopped fresh tomato
- 2 T. heavy cream
- 1/3 cup sliced scallions
Blueberry Pie

Very good pie recipe, not too runny
- 1 cup sugar, plus 2 tsp. to add to top of crust
- 1/4 cup firmly packed brown sugar
- 1 tsp. ground cinnamon
- 1/3 cup uncooked quick cooking tapioca
- 6 cups blueberries, fresh or frozen (thawed and drained)
- 1 T. fresh lemon juice
- 1 (14.1-oz.) package refrigerated pie crusts
- 2 T. butter, cubed
Vanilla French Toast

- 4 eggs, lightly beaten
- 1 cup half-and-half or milk
- 2 T. sugar
- 2 tsp. vanilla
- 1 tsp. cinnamon
- 1/4 tsp. nutmeg
- 8 slices dry white or whole wheat bread
- 2 T. butter or vegetable oil
- Butter
- Maple syrup
- Banana slices
- Ground cinnamon or powdered sugar
Sesame Beef Stir-Fry Recipe

In a small bowl, combine the first five ingredients until blended; set aside
- 2 teaspoons cornstarch
- 1/2 cup reduced-sodium beef broth
- 4 teaspoons reduced-sodium soy sauce
- 1 tablespoon minced fresh gingerroot
- 1 garlic clove, minced
- 1/2 pound beef top sirloin steak, thinly sliced
- 2 teaspoons sesame seeds, toasted, divided
- 2 teaspoons peanut or canola oil, divided
- 2 cups fresh broccoli florets
- 1 small sweet yellow pepper, julienned
- 1 cup hot cooked brown rice
Lentil & Chicken Sausage Stew

- 1 carton (32 ounces) reduced-sodium broth
- 1 can (28 ounces) diced tomatoes, undrained
- 3 fully cooked chicken sausage* links(3 ounces each), cut into 1/2 inch slices
- 1 cup dried lentils, rinsed
- 1 medium onion, chopped
- 1 medium carrot, chopped
- 1 celery rib, chopped
- 2 garlic cloves, minced
- 1/2 tsp. dried thyme
- can use any fully cooked sausage

- 3 (15 1/2-oz.) cans white beans, rinsed and drained
- 2 cups low-sodium chicken broth
