Italian Herb Baked Meatballs

First tried 1/28/2018. Easy and very good
- 1 pound lean ground beef
- 1/2 cup Italian seasoned bread crumbs
- 1/4 cup freshly grated Parmesan cheese
- 1/2 small onion, diced
- 1 egg lightly beaten
- 2 T. Milk
- 1 T. chopped fresh rosemary
- 1 T. chopped fresh parsley
- 1 T. chopped fresh basil
- 1 1/2 tsp kosher salt
- 1/2 tsp. freshly ground pepper
- 2 cloves of garlic
- Olive oil for hands
Swedish Meatballs

Preheat oven to 200 degrees F
- 2 slices fresh white bread
- 1/4 cup milk
- 3 tablespoons clarified butter, divided
- 1/2 cup finely chopped onion
- A pinch plus 1 teaspoon kosher salt
- 3/4 pound ground chuck
- 3/4 pound ground pork
- 2 large egg yolks
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground allspice
- 1/4 teaspoon freshly grated nutmeg
- 1/4 cup all-purpose flour
- 3 cups beef broth
- 1/4 cup heavy cream
Roasted Shrimp Cocktail

Preheat the oven to 400 degrees F
- 2 pounds (12 to 15 count) shrimp
- 1 tablespoon good olive oil
- 1/2 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup Heinz chili sauce
- 1/2 cup Heinz ketchup
- 3 tablespoons prepared horseradish
- 2 teaspoons freshly squeezed lemon juice, plus lemon zest for topping
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon Tabasco sauce
Shells with Veal Bolognese

3-1-2011 Easy to prepare. Has excellent flavor
- Salt and pepper
- 1 can (28 oz.) whole tomatoes in puree
- 1 T. olive oil
- 1 pound ground veal
- 1 1/2 tsp. packed fresh thyme leaves, chopped (can use dried)
- 1/2 cup light cream
- 1 pound orecchiette
- 2 cups frozen peas
Pork and Mushroom Stew with Apple-Potato Mash

First made 10/19/2011. Excellent, served over the potatoes
- FOR Apple-Potato Mash:
- 1 T. olive oil
- 1 T. butter
- 1-1/2 lb. pork tenderloin, trimmed, cut into 2-inch pieces, dried with paper towels, seasoned with salt and black pepper.
- 8 oz. cremini mushrooms quartered. Can use white mushrooms.
- 1/2 cup sliced leeks or shallots
- 1/2 cup diced carrot (1 carrot)
- 2 T. all-purpose flour
- 1/4 cup dry sherry or white wine
- 3/4 cup apple cider or juice
- 3/4 cup low-sodium chicken broth
- 1 T. minced fresh thyme or dried (use less)
- Salt and pepper to taste
- 2 lb. Yukon gold potatoes, peeled and cubed
- 1 Granny Smith apple, peeled and cubed (1-1/2 cups)
- 1/4 cup half-and-half
- 2 T. butter
- Salt, white pepper and grated nutmeg to taste
Secret Ingredient Chocolate Chip Cookies

First made 7/4/2016. Made the dough and let it sit for 2 days in fridge
- 2 1/4 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 3/4 cup (1 1/2 sticks) unsalted butter at room temp.
- 1/4 cup cream cheese, at room temp.
- 1/2 cup sugar
- 1 cup packed light brown sugar
- 1 1/4 tsp. vanilla extract
- 2 large eggs
- 2 cups semi-sweet chocolate chips
Creamy Macaroni and Cheese Recipe

Cook macaroni according to package directions
- 2 cups uncooked elbow macaroni
- 1/2 cup butter, cubed
- 1/2 cup all-purpose flour
- 1-1/2 cups 2% milk
- 1 cup (8 ounces) Daisy Brand Sour Cream
- 8 ounces process cheese (Velveeta), cubed
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/2 teaspoon ground mustard
- 1/2 teaspoon pepper
- 2 cups (8 ounces) shredded cheddar cheese

In a large bowl, beat the eggs, sugar and oil
- CHUNKY FROSTING:
- 4 eggs
- 2 cups sugar
- 1 cup canola oil
- 2 cups all-purpose flour
- 2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground allspice
- 1/2 teaspoon salt
- 3 cups grated carrots
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup butter, softened
- 2 cups confectioners' sugar
- 1/2 cup flaked coconut
- 1/2 cup chopped pecans
- 1/2 cup chopped raisins
Healthified Cashew Chicken and Broccoli

First tried 10/21/2015. Excellent, I used fresh snow peas and may need to use less ginge
- 2 teaspoons canola oil
- 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon finely chopped gingerroot ( use less if fresh)
- 2 cups fresh broccoli florets
- 1 cup chicken broth (from 32-oz carton)
- 1/8 teaspoon crushed red pepper flakes
- 2 cups frozen sugar snap peas (from 24-oz bag)( used fresh snow peas)
- 3 tablespoons reduced-sodium soy sauce
- 2 teaspoons rice vinegar
- 1 tablespoon cornstarch
- 1 teaspoon sugar
- 2 medium green onions, sliced (2 tablespoons)
- 3 cups hot cooked brown rice
- 1/4 cup salted roasted cashew halves and pieces
Whole Wheat Penne with Broccoli & Sausage

- 12 oz. whole wheat penne pasta
- 1 large bunch broccoli, cut into florets
- 12 oz. hot or mild turkey sausage
- 1 pint grape tomatoes, each cut in half
- 1/2 cup loosely packed fresh basil leaves, chopped
- 1/4 cup freshly grated Pecorino Romano cheese
