- 1 cup cherry tomatoes, sliced in half

- 4 acorn squash, halved lengthwise, seeds and membranes removed
- 1 tablespoon olive oil
- 2 medium-sized yellow onions, chopped
- 4 celery stalks, diced
- 1 1/2 cups cooked brown rice and 1 cup cooked wild rice OR
- 2 1/2 cups cooked wild and brown rice blend
- 1 cup toasted or raw pecans (or walnuts or chestnuts)
