- 1 16 oz Pkg White or Whole Wheat Pizza Dough
- 3/4 Cup Broccoli Florets, cooked & chopped*
- 1 Cup Mozzarella Cheese, shredded
- 1/2 Cup Pizza Sauce
- Olive Oil
- Parmesan Cheese, grated
- Additions: chicken, mushrooms, onions, bell peppers, tomatoes, olives, pepperoni, pineapple, ham — the sky’s the limit
- You can substitute the broccoli for any additions you desire.
Peach Cobbler

- 2 cups sugar, divided
- 1/2 cup water
- 8 tablespoons butter
- 1 1/2 cups self-rising flour
- 1 1/2 cups milk

- 1 cup almond milk, or milk of choice
- 1 ripe banana, peeled and frozen overnight
- 2 handfuls organic spinach or 1 handful destemmed kale leaves

Chai-Oat Cookies

1. To make oat flour, whiz instant or rolled oats in your blender until they reach a flour like consistency
- 1 cup oat flour
- 1/2 cup white beans, drained
- 1 very ripe banana
- 1/2 tsp ground cinnamon
- 1/2 tsp ground cardamom
- 1/2 tsp ground ginger
- 1/4 tsp ground cloves
- 1/4 tsp garam masala
- 1/4 tsp salt
- 1/4 cup light brown or raw sugar (optional)
- 1/2 cup powdered sugar, for rolling
Roasted Patty Pan Squash and Herbed Chickpeas

Like all summer squashes, the patty pan squash is best eaten when young and small
- 3/4 cup dried chickpeas, soaked in cold water for 12 hours and rinsed
- 1 2/3 pounds baby patty pan squash, about six 8-cm (3-inch) specimens
- olive oil
- salt
- a dozen stems chives
- 1 small handful fresh cilantro
- 8 leaves fresh mint
- 4 anchovies packed in oil, drained (substitute 1 tablespoon rinsed capers if you prefer)
- a good pinch cayenne pepper
- one strip lemon peel from an organic lemon
- 2 teaspoons verjuice or lemon juice
- freshly ground black pepper
Roast Cherry Tomatoes with Olives & Bowties

- 1 Pint Cherry Tomatoes
- 1 Tbsp Olive Oil
- 1 Tsp Fresh Thyme, chopped or 1/4 Dried Thyme
- 1 Clove Garlic, minced
- 1/2 Tsp Salt
- 1/3 Cup Kalamata olives, pitted and halved
- 8 oz Farfalle (Bowtie) Pasta (about 1/2 a bag or box)

- 4 chicken breasts
- 1 Tbsp butter, melted
- 1 Tbsp evoo
- 2 tsp grainy mustard
- 1 cup orange marmalade
- 2 Tbsp lite soy sauce
- 1 Tbsp balsamic vinegar
- 1/2 tsp pepper
- 6 green onions and tops chopped
- 1/2 tsp garlic powder
- 1/4 tsp chipotle powder
- 1 Tbsp cornstarch
- 2 cups cooked brown rice

1. Lay the flank steak in a large baking dish and pour the mojo over it
