Cherry-Peach Sangria

We recommend zesty Spanish albariño, but you can use any other refreshing white wine
- 1/4 cup sugar
- 1/4 cup brandy
- 2 1/2 cups pitted Rainier cherries
- 1 (750-milliliter) bottle albariño wine, chilled
- 1 cup chilled club soda
- 1 peach, thinly sliced
- 3 thyme sprigs
- 1 sprig purple basil (optional)

Louisiana Sweet Potato Pancakes

"These are a very welcome change from regular pancakes
- 3/4 pound sweet potatoes
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 2 eggs, beaten
- 1 1/2 cups milk
- 1/4 cup butter, melted
Kale, Fennel, and Beet Salad

1. To make Dressing: whisk together all ingredients, and season with salt and pepper, if desired

- 1/3 cup olive oil
- 3 Tbs. apple cider vinegar
- 1/2 small shallot, minced
- 1 tsp. sesame oil

- 2 large golden beets, peeled and diced (4 cups)
- 2 Tbs. olive oil
- 1 bunch Tuscan or lacinato kale, stems removed, leaves cut into thin strips (4 cups)

Green Bean Casserole

When I think about traditional holiday side dishes, Green Bean Casserole always comes to mind
- 1 pound green beans, cut into 1 inch pieces
- 1 small yellow onion, diced
- 1 1/4 teaspoon salt, divided
- 1/2 cup panko or bread crumbs
- 1/4 cup parmesan cheese, grated
- 8 ounces mushrooms, sliced
- 2 garlic cloves, minced
- 3 tablespoons butter
- 2 tablespoons flour
- 1 cup chicken broth
- 1/2 cup whole milk (you can use half and half if you want the dish to be extra rich and creamy)
- canola or olive oil cooking spray
