- 2 cups premade waffle mix
- 2 large eggs, separated

- 2 cups uncooked pasta of various shapes (rotini, elbow, shells)
- 1 1/2 cups sliced carrots
- 2 1/2 cups broccoli florets
- 1/2 large red bell pepper, diced
- 1/4 cup minced red onion
- half of a 7oz can whole-kernel corn, drained
- 2 Tbsp virgin olive oil
- 1 tsp red wine vinegar
- 3 cloves garlic, minced
- 1 tsp dried basil
- salt and pepper to taste
Black Beans and Barley

Soak beans in water overnight
- 1 1/2 cups black beans
- 1/2 cup brown lentils
- 1/2 cup barley, brown rice or bulgar wheat
- 6 cups distilled water
- 2 tsp dried minced garlic, or 1 1/2 tsp fresh garlic
- 1/4 cup dried minced onion, or 1/2 cup fresh onion
- 3/4 tsp ground cumin
- 1 1/2 salt or to taste
Corn Bread Sloppy Joes

- 1 pancake (8-1/2 ounces) corn bread/ muffin mix
- 1 egg
- 1/3 cup whole milk
- 2 pounds ground beef
- 1/2 cup chopped onion
- 1 jar (26 ounces) meatless spaghetti sauce
- 1 cup frozen corn
- 1 can (4 ounces) chopped green chilies, drained
- 2 envelopes sloppy joe mix
- 1 cup (4 ounces) shredded cheddar cheese

This birthday cake gets its sweetness from apple juice and maple syrup instead of from refined sugar
- 1 cup white, all-purpose flour
- 1/2 cup oat flour
- 2 1/4 teaspoons baking powder, divided
- 1/4 teaspoon salt

- 1/2 cup apple juice concentrate
- 1/2 cup milk (dairy or soy)

Orange Granita

Cut the top off each orange, just enough to scoop out the pulp for later use
- 6 small oranges, empty and frozen
- 1 1/2 cups orange juice from scooped oranges
- 1/2 cup water
- 1/4 cup sugar
- 1/2 cup orange-flavored liqueur (recommended: Cointreau)
